I'm looking for choice, farm raised, pork that would be excellent for making some charcuterie cuts, anyone have a source, preferably on the west side?

Skin on processing isn’t available commercially though for some charcuterie cuts sadly. I can’t justify the 800 mile trip to where I can get it done.

Whit x10. Im a wild game snob. I buy zero beef and seldom touch pork but I always scoop some from whit when I visit. Absolutely top shelf stuff.

I know a guy way up north here (N of Bham) that has alot of pork and beef for sale!

Each year we buy more. This was a full pig year.
We bought a full steer too, from a local farmer friend. 100% grass fed

If you live in NE WA try some of the bacon you can get at the Blue Creek store, it comes from my cousin's hog farm.
