I took my first whack at it last year....  My first thought after making a test batch with burger was why did I wait so long to do this!  So good.

The deer was better than the beef, and the hands down winner by all who try it is the bear.  Don't know what it is about bear meat but it makes outstanding summer sausage.

Bear sausage is awesome. By far my favorite. Best I’ve ever had is from an Idaho bear.

Anyone can make summer sausage. This recipe actually tastes good and is super simple

Did 40lbs not too long ago with this years bear. I usually do 50/50 wild game & pork shoulder mix so I get a little more end product. Don’t know if it’s the right way but it turns out good! I’ve used seasoning mixes from high mountain and sausagemaker.com and both have been great. Didn’t smoke this last batch, just did it in the oven.

I like to buy my casings and seasonings from Waltons. The packages come in 25 pound batches which is typically how much I do at a time or sometimes 50. I personally like to do about 25-40 percent straight pork fat. I don't like buying pork butts from Walmart. I believe the taste and consistency is a lot better. You can buy it from a local butcher. Also allow the meat to sit in the casings overnight before smoking and once it's done cooking, put it in an immediate ice bath and let cool before packaging.

Just finished a batch 3 days ago. 25lbs total, 19lbs of deer and a 6 pound pork shoulder. The bearded butchers DIY kits are pretty good, I would recommend them over the kits at bass pro and cabelas.

Hi mountain seasoning is good for summer sausage.  As mentioned i use approx 23 lbs game and 9 lbs of pork butt.  We just did a 25 lb batch of jalapeno/cheddar brats using Bearded Butcher seasonings and just pork butts.  It turned out great although their kit was a little spendy
