Fresh smoked oysters with fresh smoked pepper jack cheese. 

And thinking a dot of Chipotle sauce or Hollandaise sauce will send this over the top, Hmmm????  :tup:

I loved smoked oysters on crackers with cheese.  This is a staple at elk camp and a beer sets it over the top.

It is pepper jack. Use chipotle, and a nice Syrah.

I can't believe I'm posting on a hunting website regarding the wine I like, but here goes! Yes A good syrah with this would kick butt. Another wine my wife and I have started drinking is Apothic Red. Its a blend of Cabernet Sauvignon, Syrah, Merlot and Zinvendal. One of the smoothest and most flavorful red wines I've ever drank. $10 at Safeway, or buy 6 and get 10% off!

My uncle grows oysters in Willapa Bay, he owns Stoney Point Oyster Company out of Bay Center and he makes these oysters he calls "Brinies". He has an original, BBQ and Teriyaki flavor and they are amazing. If you're ever in town there ask around and see if you can get some from him, they'll change your life.

i have tried the apothic red, im not a wine drinker either because to me they are all bitter. My wife LOVES wine, lately shes been on fruit wine, HUCK, made from huckleberries, its ok but its not Bourbon  :chuckle:

sirmissalot, i have never smoked them i buy them in a can because i have no idea where and how to get them :bash: but these were from a buddy who does smoke them, ill ask him  :tup:
