So this will (hopefully) be my first deer this year. And I'm wondering if you have to let the deer hang for a week before skinning it? Also has anyone tried deer bonemarrow? And if yes how did you get it out of the bone? Thanks!

No you want to skin that thing as soon as possible. Don't let it hang for a week with the skin on.

I would skin as soon as possible, it's much easier when the deer is still warm. You can let it hang for a week (after skinning) if the temperature is not much over 40 degrees during that time. But it's not necessary. I cut and wrap my deer as soon as I have time, usually within 4 or 5 days.

 Your deer will taste much better the sooner you can get it cooled down which is mostly done by gutting and then skinning. The only time I wait to skin is if it will get dirty, but that hide comes off asap.
There is no greater respect to have for wildlife than to harvest an animal fairly and use it's flesh to feed your family.  ~me

Years ago i read about a study done by some University maybe CO. Took a bunch of big game animals, split the carcass skin one side and left the skin on the other and hung them. They butchered them and cooked them. People could not tell the difference in the taste. We live on the west side of a skin, no skin line which is about MT and WY west. I've driven east during hunting season and once you closed the line the deer hanging had the hide on.

If you have ever eaten game meat that suffered from bone sour.....you would call that study a joke!! Bone sour is from meat not cooling down properly! Leaving game over night on the ground or leaving the hide on can do that!
Remove the hide immediately....hang the carcass so it can air dry and get a nice crust, then it can hang for quite awhile. Moisture and heat are the enemy of good game meat!
Use high quality game bags to keep flies, Hornets and dirt off the meat.
Oh, and game fat, not good! Get it off!

I skin all animals asp.

Also note washington if the game agent doesn't hink you took good care of your animal. He may ticket you for wastage at his discretion .

I have a game agent who comes to my Hunt Ed classes. He tells every class that he writes several tickets a year for people not skinning there elk soon enough under wastage law.

If he checks them and it is not skinned he tells them to do it. Than he checks back in several hours. If they haven't skinned it. Ticket time.

It's all temperature related.

Most of the time the hide should come off right away.

If it's cold enough, and I wanted or needed to hang the deer for a while, I might very well leave the hide on. I have done this on occasion, and it really cuts down on drying and needing to trim dried meat edges.
