Ok here is my take. I absolutely didn't have any idea about this type of meat product before I purchased this 10 lbs. Looked at the price ($20 off reg price from 95 to 75) and have heard folks talk this and that about Proscuitto. So with the Holiday season upon us and my thing is making smoked cheeses/sausages/meats for gifts for family/friends/co-workers, it thought what the heck........
This boneless ham if you will came via UPS, opened it up and there was a melted gel cooler pack. Instructions said don't worry, only needs refrigeration after opening. Sealed in a type of aluminum wrap. An entire boneless ham. NO odor at all, I was expecting a salty ham smell. Nothing.....
I did trim some of the outer layers that were discolored but not in a bad way, just colored fat. I decided to 1/4 it to make it more managable. 3 of the 1/4 pieces i vacuum sealed for later (let me know if i need to do something different)
I hand sliced some paper thin pieces to eat "raw" and on some fruit as that is what the pics show to do. Really no flavor other than a smooth buttery flavor/texture. Very good and not unpleasant at all.
I froze 1/4 and tried to slice on my 1960's slicer, nothing doing..... Thawed in the fridge for a day and tried again. Perfect!!!!!! sliced a tray of paper thin pieces. Grilled them tonight to a firm not quite crisp texture to put on burgers. OH MY......... The Salty Bacon Flavor appears. I had no idea and it was such a surprise from the "raw" state. Not sure that is even possible. You Guru's tell me if this is right, maybe i'm imagining?? My Daughter says this is WAY better than bacon.
I'd better try it again tomorrow to see if i'm psyco or something???
So if this is still on sale at Costco you guys on the fence might want to consider. Or hit me up for some left overs
