I might as well always figure a 1 man tent is too small for 1 man and a 2 man tent is really a 1 man.
Having said that, if I was wanting to do what you want to do, I’d put a canopy on my truck. Build a little elevated platform and put a mattress on top and have storage underneath.  Get an easy up to cook or whatever underneath.

Coleman makes a "EasyStay" mattress at 72x26x6 dimensions, and gives room for my large cooler and other gear on the other half of the truck bed so it all fits between the wheel wells.  Sportsmans Warehouse carries it.  So more of a "half platform" approach.  My truck bed is only 74" in length, so some mattresses are too long.

I have a 1 man marmot force tent that id part with. Love it but as others said, when I'm in the woods i wanted more space for my stuff so i upgraded to the two man. But i really did like the 1 man tent, so quick to set up and roomy enough to sit up in and very light. Id let it go for reasonable offer...

+1, literally in this case, for the 2-man tent or larger option. 

If weight is no object, there's no sense in limiting yourself to a cramped shelter.  Give yourself enough room to get some good rest.

With the weight of tents being so light these days, the 2-person tent is nearly the same as a 1-man weight wise for probably around $50 more in most cases. Go with it and you'll be happier, especially if the weather gets crappy. I've slept in one man tents plenty, they are fine if the weather is good, but if your holed up for long periods of time or even for the fact that it gets dark much earlier during hunting season, the extra space to stretch out, change, read a book, etc is nice to have.

That's exactly what I do. Canopy on truck bed. Easy up makes a nice dry place to cook and covers the back entrance of the truck to keep dry if weather strikes.

I was very surprised at the three man tent I recently got. I went with a brand id never heard that was considerably cheaper as I planned only on using it on the rare occasions my wife would come out with me but after setting it up I think I'll use it more often. Packed size and weight is neglibly more than a smaller tent but the larger interior space is like staying in a hotel. So much more room for activities!
