Taste like lean beef. Dark red meat I grill the back straps and bone out the quarters into grinding meat and cut with bacon makes awesome burgers! Going to try smoked jerky and roast this year as well. Ribs are good on the grill as well and of course organ meat is good and healthy very small heart for such a big animal though

I have made pepperoni ( beaveroni) sticks out of beaver meat and it was very good.  I prefer the Terriaki flavoring rather that Jalapeno. Make sure it is a fresh beaver and no liver spots.

Checked my trap the other day and received a surprised the second biggest beaver Iv ever caught, 55 Pounder!

How do you BBQ beaver ribs when the meat around and between the ribs is literally paper thin?

Indirect heat about 250degrees real slow I'm going to try them on the smoker next

Didn't see these pinned posts til now about WSTA records  :bash:.....just finished fleshing this one out, weighed in at 63lbs....not sure if a bigger one will fit in my beaver traps!

Many yrs ago my dad would let me pick spots I thought would be good to set a trap and set one.  On a particular mountain steam/pond I found a huge alder that a beaver was working on and set a trap.  2 days later I had a very large front foot in a trap that the beaver had twisted off before he drowned.  I was a 10 yr old devastated young man to say the least.  A week later, dad caught that legless beaver in a 330 set in the stream.  Weighed in at 73 lbs.  Prime beaver was going for top dollar, and I insisted on skinning the beaver myself with a reluctant dad looking on.  Yep, put a big gash in its back and it was not worth nearly as much as it would have been.

1 of 3 75”-80” beavers caught this year. I should’ve weighed the 80” beaver!
