fillet knife i use and really like..cheap enough to keep one on the boat and one in the kitchen.

I have a Cutco but if i was a better fisherman or wanted a new knife Id have to try that Victorinox
The best part about the Victorinox breaking knife is it only cost about $35.

I actually bought a "bearded blades" custom Damascus steel knife this year. The thing was sharp when I got it and hasn't lost it's edge yet. I filleted a lot of fish this this year with it and highly recommend it. The guy who builds them is a vet and gives a tin of money back through TFO.

Don't know if they still make them Coleman, I've been using a set for years 6", 9"and 12". Hold a good edge just enough backbone to work. Gave some out as X-mas gifts to the cousins who guide in Canada they are still using them.

Great video Fungunnin.  It is aptly titled.  The meat loss was ridiculously low.  Thanks for sharing.  Your multiple cuts at the spine is something I am going to try out.

With a sharp flexible filet knife you can go in on the back and cut slab and leave bones in one motion.  Twice as quick though not always as pretty.

That is the method I was taught and have always used as well.  As far as knives.  I still use my dad's old Case.  It's not made for production, but it can be sharpened to a razors edge and can double as a boning knife.
