Alright guys I'm in need of some inspiration and down to the last couple pounds of elk burger from last year . Anyone got mamas old meatloaf recipe laying around.  I know somebody out here has an idea or recipe that will make me sing a happy tune. I've been mixing Jimmy dean Hot pork sausage with my elk at 2 elk pound to 1 pound pork sausage mix and its heavenly with lots of seasonings and Italian breadcrumbs.  I generally just open the cupboard and dump most of the cabinet in there, with a brown dijon mustard and horseradish mayo on top.

swap out Italian breadcrumbs with english muffins either pulled into small chunks or ground in food processor. A little liquid smoke is nice too. The key for me is to cook the meatloaf about 5-10 minutes less than what you think is fully done. Let it cool then bust out cast iron skillet, get it piping hot and sear it for a minute or two on both sides. The char is awesome  :drool:

1 lb meatloaf
3 sliced crimini mushrooms (baby porto)
1/2 cup drained fresh salsa
2 eggs
1 Tbls Premium Dark soy or Worcestershire
1/4 cup breadcrumbs

Mix all ingredients except the bacon (it helps to beat the eggs in a bowl first). Don't over-mix. Put the loaf in a 10" square pan and cover with the raw bacon and refrigerate for at least a few hours. Preheat oven to 375F and when heated, cook the meatloaf for 35 minutes or until an internal temp of 145F. Finish under the broiler or with a torch to brown the bacon. Let rest for 10 minutes. Serve with brown or mushroom gravy. If you forget the mashed potatoes, my wife will chastise you for days.

Elkloaf

Mix it up and put in standard sized loaf pan:

1 1/2 lb elk burger (no suet)
1/2 lb lean beef burger
3/4 cup break crumbs
1 egg
1/2 WW Sweet Onion/chopped
1 diced green pepper
Splash of Winchester sauce
Few good shakes of Alpine Touch Hickory Smoke seasoning
Few grinds of pepper
1/4 cup ketchup
Squirt of Dijon mustard

Sauce (bring to rolling boil then simmer):

1 can tomato sauce
Extra big squirt of ketchup
2 TBS brown sugar
2 TBS blackberry jam
Tiny bit of Liquid Smoke/Hickory


Bake covered elkloaf at 325 for about 1 1/2 hours; remove tin foil; spoon on some of the sauce; continue to bake for another 15 minutes or so. We like our meatloaf a bit crispy on the outside so I kick on the broiler for 5 or 6 minutes at the end. Let elkloaf cool for 10 minutes, slice, and serve with a goodly portion of the sauce spooned on it.

I've done a full size one twice and did a handful of mini loaves out of a pan my wife has and gave those to my hunting buddies  :tup:

My recipe is my mom's recipe and it's pretty simple but turns out good.

1# venison burger
1# Italian sausage
8 oz tomato or pasta sauce
2 eggs
1 1/2 cups oatmeal
1 tsp. Montreal Steak Spicy seasoning

Mix everything together and pack in a standard glass loaf pan - bake at 350 for an hour and a half and serve with mashed potatoes and brown gravy

Wifes is amazing. Standard meatloaf but using rice cakes as a binder since she is celiac and cant have gluten. Stuff with onions, mushrooms and pickles. Kinda like a loaded hamburger

I ended up borrowing ideas from everyone !

1 pound "Hot" ground pork
1 pound ground elk
1 egg
3/4 cup garlic and herbs breadcrumbs
Fine chopped onions, mushrooms and jalapenos
Trader Joe's BBQ rub (coffee and garlic flavor)
The top was coated in a smoky barbecue sauce and chipotle Mustard. With pickled Jalapenos on top off the loaf.

5 minutes with the broiler on at the end is crucial !

This was spicy, delicious and definitely not your mamas loaf Haha

This was the most delicious spicy meatloaf.

That sounds fantastic. I always do the little meatloaf muffins. Make about 12 of them and then freeze what we don't eat in 2 packs. Great for lunches, quick dinners, etc...

I might try this recipe coming up quick, I have a fresh batch of hot italian elk sausage coming my way.
