Those are some dandy fillets. Also with the fillets clean off all the fat and red meat. Its really strong.

From the first weekend it opened the first year it reopened. We killed a pile of them with that original slot limit.

Ive heard mixed things about sturgeon palatability, but a friend gave me a nice chunk of sturgeon fillet last year and it was really damn good.  I need to figure out how to catch one of those suckers.

pretty hard to beat sturgeon for white meat fish, no bones, firm and tender. Can be cooked so many ways

Thing of beauty. Its been a few years since Ive fished sturgeon. May have to try to get 1 on the next opener over here. Love smoked sturgeon. Poor mans lobster, pan fried, and any other way!
