Thanks all for the hints and support for filleting fish, but I looked in my freezers, and with the fish I already have on order from Chris, probably don't have anymore space.  Something about too much elk, but that's not a bad thing at all.

Yeah, heard they are kind of hard to come by right now.  Be a bit harder to deliver, little more logistics and a bigger truck :chuckle:  Chest freezer jammed, upright freezer jammed and freezer over the garage fridge is jammed, can't pass on Skillets fish though, I'll find room for what I ordered.

to much overhead, to many logistic issues, better plan is to swap Elk for Fish.  No new freezers required, just swapping freezer space for freezer space... Then everyone has surf and turf...!!!!

About 10 seconds before I squeezed that silky smooth Knight trigger on my elk this year, I thought to my self "This is not a good idea.  I have zero freezer space right now."

Quick trip to Lowe's solved that problem :tup: :tung:

Can always just "store" a freezer for a guy. Said a month, 2 at most. Been a year. Finally just filled it with deer and elk meat. It's not going anywhere anytime soon now.

Had the same problem after a moose hunt.  Lowes to the rescue.  Chest freezer #4. Funny though, it now seems to stay full all the time.  I think freezers are kinda like gun safes.

Back on topic, can't wait until the 19th.  For those who haven't had them, the king crab legs are unbelievable.

3 to 1

Brown sugar to kosher salt. Mix, cover fish fully. Let sit for 3 or 4 hours or 24 if you want.

Rinse, cold water,  rinse again.

Air dry. 1 hour.

Smoke it. Let it cool. Vac pack it, eat it. Imo, the vac packing and resting finishes it off as the oils redistribute.

H20, am assuming this is a dry brine?
