Favorite Wild Turkey Recipe

Wild Turkey can be a challenge to prepare for the table so it is not dry or tough eating.   My favorite way to deal with a longbeard is to grind with a little pork.   Absolutely delicious turkey burgers on the grill!  So I am interested to know what is your solution to prepare a wild turkey for the table.

Same way I cook a Grouse

Cut the breasts into strips and soak in milk over night. Season to taste and fry in bacon grease or olive oil

With the legs, I put in a crock pot until I can pull the meat off. I then make a huge batch of Turkey Taco soup

My two favorite ways to cook wild turkey are:

1.  Turkey schnitzel....slice the breast thin and across the grain.  Pound it thin.....then even thinner.  Egg wash, panko and then to the frying pan.  It cooks quick so when the panko starts to brown, flip it and brown the other side.  Best chicken turkey nuggets in the world.  Don't forget whatever seasonings you like to spice it up. 

2.  Turkey soup / stew.  Breast, legs and thighs in a crock pot with a little chicken stock and seasonings......cook it all day loooonnnng.  A couple hours before dinner is going to be served cut up or shred the breast meat and pull the dark meat off the bones / tendons of the legs and thighs (the meat will literally fall off).  Thicken the broth with a little corn starch and add your vegies.  I don't add noodles but you could if you so please.  Throw the meat back in the soup / stew and let it simmer till serving time.  It's even better the second, third and fourth day as leftovers.  My preferred vegies are mushrooms, corn, onion, celery.  As I serve it.....I also add some cholula for acid and spice.  It's amazing.

I’m following this. I have been told over and over by a lot of folks they are horrible table fare.  I was working up to at least smoking one some day.

I strip it out,beat the crap out of strips with meat hammer to the point where strip turns into flat fillet.

Then I make like a watery gravy
Out of water and flour
Not pancake batter thick,but think water downed pancake batter.

Then dry flour mix is Johnny and black pepper.
But you can use whatever seasoning you want.
Basicly seasoned dry flour.

Into the wet mix,into the dry mix,then I like to put the dry mix into a closed container ,so you can shake the dry mix into it real good.

Then fry it up in olive oil,vegetable oil,lard,
Or whatever .
I use enough that it doesn't cover it.
But deep fryer would work best most likely.
I just pour a cup of oil in the pan.

Made turkey Katsu this week. Took one breast and cut it into thirds then hammered it out. Flour, egg wash, panko then fried at about 350 for 6-8 min.

Katsu sauce.
1 tbs ketuchup
2 tsp Worcestershire suace
2 tsp oyster sauce
1 tsp sugar

Son made some like fish n chips recipe.  was amazing.  Was also great as bbq shish ka bob.
