Here is a pic of my smoker loaded with peperoni.
It is all stainless with a woodstove 10 feet away for the smoke generator. It has a propane digitcal burner on the inside to maintain temp. in case fire goes out. That way I don't go from hot to cold and keep my product out of the danger zone. It has a 30ft chimeny that comes out of bottom side which makes the smoke roll in the chamber and gives more of a even smoke to all levels. Pager on my belt will warn me off any flucuations in temp. Yes it has a beer holder on it! How do you use spell check?
