I had Praire Meats in Post Falls cut and make sausages (mostly summer) for me from a bear and they did a great job.  Even those who didn't usually like game loved it.

I have also had goo luck with the butcher at the Benewah Market in Plummer, ID.  He has cut a couple of elk for me and done a great job of doing anything that I ask.  He also does the beef for my wife's uncle.

Treasure Trails processing in Glasgow, MT if you are hunting NE Montana,  I would recommend them. They did a great job and had a quick turn around.

We use Nile Valley always. The owner is very particular on what you bring him and is not afraid to voice said opinion. I am confident you get back your meat at pickup.

Eggers in Deer Park no longer does wild game.  North Spokane Eggers will process wild game into pepperoni, sausage, etc., but they do not cut and wrap.  South Hill Spokane Eggers still processes whole animals, $175 flat rate for deer.

Ya I know ,it sucks
Like there pepperoni,summer,didn't really like the breakfast sausage.
But because deer park quit taking wild game,I just make my own summer now.
