Just noticed this old thread and will add a couple of skinning tips on bears learned the hard way. :)  This is primarily for a bear hide rather than a full mount. Ask a taxidermist about my suggestions here before you do your bear.

1.  Have one person do the cuts on both legs, front and back.  Two people cutting is a recipe for uneven cuts.

2. When splitting the hind legs from anus to back pad, or vice versa, look at the pattern of fur before you touch a knife to the bear.  The thick fur on the back/butt of the legs wraps around the ham to part way across the inside of the leg. Then it thins out, almost to a bare patch sometimes on the inside of the ham in the crotch.  Cut along that "seam" at the edge of the thick and thin fur, and keep the thick fur together on the rump/back side rather than cut across it. That will make the cut on the hind leg curve toward the belly rather than be straight.  That's OK.

If you cut straight down the back of the leg, you will cut through that thick fur, which makes an odd patch of thick fur attached to the thin fur of the belly and flank.  I prefer that thick fur to stay together on the butt of the bear which makes a rounded butt section of thick fur on each side of the tail when the hide flattens out.
