So i've decided to try out making some sausage/pepperoni out of my duck this year. I've had it made in the past but its too dang expensive for me now. I'm hoping some of you who do this a lot can offer some good recipes to try. Looking forward to this, I've come away from here with some really good deer/elk recipes, hoping for the same with fowl.

I used high Mt pep season last year with the duck we shot and it came out pretty good :tup:
I learned that you really dont need to add water to the seasoning mix, the fowl has enough moisture in it.

Mixing water with the seasoning helps distribute the seasoning evenly in the meat
Hi mtn seasoning is great stuff it is a really good base you can add what you want to it such as Cayanne or what ever you like there are several links in the Cooking Links section in this forum if you dont want to use the pre mixed stuff also the book By Rytek Kutas mentioned there has several recipes in it
