Title: *Why waste the vac bags!*
Post by: Hawgdawg on February 21, 2013, 10:25:53 AM
:bash:I'm thinking.............Why waste my time and money vacuum sealing this Elk Jerky when I know it won't last long with my buds smelling the smoke on me! Nothing better then when it is just out of the smoker and still warm!

In addition: How do they make liquid smoke? Personally have never used it.
My crew calls me liquid smoke cause I have a beer holder on my smoker

Alton brown made his own liquid smoke in either the beef jerky or ribs episode. It apparently involves real smoke.

Check youtube. Alton brown used a clay fire pit with a chimney, at the top he used a bad of ice to condense the smoke and create liquid.

Looks tasty.    liquid smoke is just what it says.   Look at the ingrediens on the bottle.  it typically only says "smoke"

The reason I am asking is my chimney design on my smoker has a clean out tee that I put a bucket under and depending on the outside temps I can gather, what some people call liquid smoke? I have posted the pic before, but check out how my smoke chimney rolls out the bottom of my smoker. I feel you get more even smoke by it rolling around and exiting out the bottom, verses in and straight out the top! jmo

Thanks, SS12,

I try and slice my meat semi frozen. It is alot easier to handle.

I just added some High Tech Red Neck lighting to the smoke shack.  Some old colemen lanterns that I ran some xmas light to.  I have updated to propane and had no use for them anyway.

Also put some metal sides on the shack to keep the chill and wind off the smoker in the winter.
