Not saying you have;nt caught fish but the first one is a spawned out steelhead and the salmon look like spawners I think brighter fish eat better but to each his own and good fishing.

That, is a true buddy!

Totally common for people to prefer the tail. Only reason it would seem drier is that it's thinner and gets overcooked when a whole fillet is cooked at the same time. With real quality fish, I never cook a whole fillet; by the time the thickest part is just done, the thinner parts are way overcooked. Collars are delicious. And bellies. And the fin sockets. And parts of the head.

Smossy,
You must be a gifted chef. :tung:

I truly am, Im 26 now and have been for the most part fending for myself in the food department since I was probably 5 or 6. Cooking top ramen at 5 throwing random things in it :)
I make awesome stews. "Alittle dash of this, a alittle splash of that, everything under the kitchen sink" Good to go!

There's only been a few times in my whole life to where I had to throw something away, or had someone not like it... And thats usually related to too much salt :chuckle:

Ask my wifey, She doesnt know how to cook. Someones gotta do it! :dunno:

Not even close......some places I go, I average 7 inches on the rocks.....not even that uncommon to get an 8.....

wrong, dont confuse me with other haters, im not a chrome snob, im a juicy snob, food is food and you have not stepped up to MY table so it has nothing to do with the cook :chuckle: point is, its a fact, a hard fact, the tail  tends to be drier because its a thinner smaller cut so the meat dries out faster, the collar is very thick and so it holds in juice more, its just a fact it has nothing to do with being a snob. we eat plenty of pinks, granted if its from the river its smoke only on pinks brcause i just dont care for mushy white meat.
