what is the best way to cooking squirrel, i have to full carcasses in the freezer from this weekend? im excited since i have harvested it myself, ive only eaten squirrel from other peoples.

lay it out on a cedar plank, grill it, then toss the squirrel and eat the plank :chuckle:

I like grey squirrel slow cook in a crock pot with some dumplings.
Fox squirrel I'll fry them up with smashed potatoes, and good old brown gravy :drool:
I can't wait to get to Iowa to load up on some squirrel :drool:

got em with my hound a little outside of cheney. perfect spot for squirrel and chipmunk, so i just take my hound out to keep her nose sharp til next rabbit season.

I would slow cook them until they are tender.
BTW, I'm pretty sure it is illegal to shoot chipmunks anywhere/anytime. :dunno: And why would you, they're too small to eat and they are not vermin or pests?

but i thought it says you can take them anytime if reason because of depredation. the farmer that let me hunt on his land because they break into his grain shed and is infesting his water purifying system thing in his field for his horses. i will talk to fish and game to just be safe. thanks

I don't believe there are for protected/threatened species.
I think the depredation deal just works for mainly crows. Other species can be taken, but require a written permit from WDFW.

you can still hunt eastern grays and fox squirrels, in many places they have become a nuisance out west where they are not naturally found. Typically more in city limits is the only problem.

Regardless of the fact the farmer wants 'em gone you may want to just keep it quiet. At times it may be better to ask for forgiveness instead of permission....probably not the best to do so with the WDFW.

If the chipmunks were IN the grain shed, maybe, but not running around the trees outside. Horses drink out of rivers and mud puddles, not sure how chipmunks would be "infesting" his water purifying system for horses?

me either, i dont know why he has one but he does, and he just is tired of them getting into it and asked for my help. definitely only shot the ones in and around the shed too.

i talked to fish and wildlife, they said if they are messing with stuff and destroying property or man made equipment, it is ok as long as i contact their wildlife biologist, which i just did and he is going to give me a special permit to do so. sigh so, thank to everyone for being kind and helping me, on a forum that is really appreciated

Glad it worked out. I bet a Chipmunk Permit is about the rarest of all our tags.

least, yellow-pine,Townsend’s, and red-tailed chipmunks The red squirrel, Douglas squirrel, and Northern flying squirrel are protected species and can be trapped or killed only in emergency situations when they are damaging crops or domestic animals (RCW 77.36.030). A special permit is required in such situations.

Having a permit now doesn't change the fact that you didn't.....Not trying to be a jerk...I still suggest STOP POSTING.....and delete your posts about any killing of Simon, Alvin, or Theodore prior to having any permit allowing you to do so.

Just make sure you cook it slow.. Also, dont forget to remove the glands out from behind the joint in the back legs.. if you dont it will not taste too good. They are white and on the back legs where the muscle separates.
But i cook mine in a crock pot or a pressure cooker to make them tender, all i add is some salt and pepper

Back to cooking crook pot with cream of mushroom soup onion and mushrooms let sit all day laddle out bones and carcass put meat over rice or noodles delicious did up a couple of eastern greys that were harassing wifes bird feeders tasty little critters.

Take your favorite chicken stew or chicken pot pie recipe and insert baked, boneless squirrel meat. :drool: its so good. :tup:

Can't know about squirrel out here, as already stated, most are protected or not what I would call palatable.
Eastern hardwoods greys are my favorite game animal to eat.
Youngin's get quartered and a soak in buttermilk. Dredge in seasoned flour and fry in butter with a little bacon fat. Make a pan gravy and serve over biscuits.
Old ones get stewed/baked/pot pied for a few hours. Tons of ways to cook them, most all delicious!

You can tell people who haven't eaten southern cooking my grandmother used to flour and cook them in oil just like chicken used to eat them every time we went to Arkansas some fine dining there :tup:

As stated above, squirrel stew is awesome. I brown the boneless pieces of meat in a skillet first.
