I dry canned my first jar of Talapia and Rainbow trout last night. This morning I took it out of the pressure canner and it looks absolutely amazing. I am so happy with the results.
I just had to share.

Looks great? What about taste? Some of my worst memories and mistakes started with that looks great, looks good, do able.......... :chuckle:

we will find out about taste and texture when opened. It's canned currently and won't be opened for a bit.
