Where's a good place either in Seattle or on the Eastside (kirkland, bellevue, etc) to learn about bows (and eventually buy one)?

Nock Point in Mountlake Terrace. Second to none.

Yeah at this point, as long as they have a helpful spirit, I would say anywhere is good.
When I was trying to learn basic terminology/facts I definitely benefited from being in-person at bow-shops. A five minute conversation will help a ton.
When you're just starting out, try to sense what is preference developed by decades of experience and what is general knowledge.
Have fun and don't spend it all in one place.

Go to Nock Point. Wait until after archery season is over. Every bow shop is crazy right now.

riverside up in Mount Vernon is good also.
