The only way it gets better is if you kill the steak. I'll be eating grouse and chanterelle's tonight.

Grrr. I had a shot on a grouse, He caught me on my draw and took off. So close.

How'd you like those chanterelle's? I make a mean mushroom burger with them.

Sauted them with some shrimp and onions. Put them on some steaks. Superb! Gonna look for some more when I go camping this weekend.

Had last of Elk steak from last year and chanterelles wends night...Grouse breast wrapped in bacon on Fri ....Pork ribs and huckleberry cobbler last night.. :cue: Good thing I'm covering so many miles during day, might gain 10 lbs if not :chuckle:

man, these are my kind of people! Smossy that looks damn good. I usually find them in areas that have elk. Is this the same for you guys or is it just that im hunting elk at the perfect time for these mushrooms?

Keep an eye out for the Porcinis! We found a bunch last week. You think trellies are good, you havent lived till ya had Porcinis!

Never picked those before. Seen a bunch of them from time to time. I only have picked what I am 100% sure of. That's Chantrelles and Morels. May have to add these to the list. Are there any other shrooms that look close to these porcinis and are poisonous? I've got a book on shrooms at home I have to look at now...

Porcini's are small King Boletes. They have a sponge for gills. Only thing you can mistake them for is another Bolete. The have a huge bulb at the base of the stem. Top is tan/yellowish/whiteish.
When they get bigger they turn more red on top and yellow sponge underneath.
A number 1 grade will usaually have a smaller cap in diameter than the bulb. But can vary.
Cut them thicker, like .25" thick, cook down all water and then lightly brown. So good you gotta lay down to eat em! :tup:

Saw a heard of about 15 elk in the white river unit last weekend. One cow got hit by a vehicle.

Our last dinner in elk camp was seasoned mashed red potatoes with sautéed chanterelles and Italian white truffles under sliced elk sirloin and ribeyes and a fresh tossed baby lettuce salad. The spot I found the chanterelles in, I could've picked 50 lbs in minutes.

Was a good looking cow. Hopefully she didn't go to waste. Smossysgirl; I dont know much about that unit except Hancock has land in that unit. You have to buy a pass but I belive you can shoot deer bear and elk, unlike the kowpowsin where you need to be drawn to hunt elk.

are chantrelles out early this year or is this the norm, up in the spots i get them it always seems like they dont come in till late october early november :dunno:

Maybe a week early in the beginning, but not much. However, the bloom is huge and the number of other varieties coming in is great. We're already seeing fried chicken, chicken of the woods, cauliflower, blue chanterelles, pig's ear, matsutake, porcini, velvet porcini, still seeing lobster - it's crazy how many edibles are out there.

well looks like i will have to get out this weekend and go get some, hey do any of you clowns dehydrate your mushrooms or just vacuum pack them, what is the best way for long term storage of the fine fung-I? i dont much care for them but i do like to cut them and give them away :tup:

There are benefits to dehydrating and to freezing. Dehydrating often increases the flavor of the mushroom. I've been told that the flavor is increased by a fungi which occurs naturally and floats around in the air. It attaches to the drying mushrooms and increases flavor. When you reconstitute them, you get that bolder flavor. This is especially true of morels, porcini, and lobster mushrooms. Try reconstituting dried mushrooms in cream or whole milk. Then use the liquid to make whatever sauce you need for your dish.
For freezing, if you sauté the mushrooms first (like you were going to eat them right then), you get the best results, as the cell damage is completed by the cooking process and freezing will then have little or no effect on them. When fresh mushrooms are frozen, they tend to be spongy when you thaw them out. Some who freeze them raw, cook them right from frozen with good results. I like to sauté them first because it's like a pre-cooked side dish. Throw the vacuum bag in boiling water and it's ready in a couple of minutes. This works great with almost any mushroom, including the shelf fungi like chicken of the woods. You can also make the sauce ahead of time and freeze it and the mushrooms together.

hey pianno are you pretty versed in recognizing mushrooms and such?if you got sometime pretty soon like before deer season, would you be up for learning a few new spots? i would like to learn more about them and some of the spots i go are a sea of shrooms, mostly chantrelles but i see other types in there to, i use to cut them when i was younger and sell them to the mushroom buyers, it was a great way to make gas money as a kid. if your up to learning some new shroom places let me know, :tup: thank you for the info on the differant types of care for shrooms :tup:

I'm always up for picking spots but we're putting on a new addition and I won't be free on weekends until 2016, I'm sure. :bash: Enjoy the season. This promises to be the best mushroom fall in 20 years. I hope you get some benefit from my storage info.
