I had a sony cybershot. Loved it, could take video easy to use and good pics. only problem was because of the format/ resolution I could never blow up a pic bigger than 8x10 without loosing quality. That camera broke and I bought a cannon 20d.  These cameras take great pics from what I am told but what a pain in the butt to operate. so many things to  screw with before you can even take a pic. great for scenery and such but not great for scouting/hunting. I do not know about you but alot of times when I get on animals I need something quick. plus they dont have video
Is there a compact camera that shoots in the raw/takes video/ and easy to use?
I have looked at somethings online and see cannon has a camera g16 I believe. Says it shoots raw/jpeg but all those other numbers mean nothing to me. Will this camera allow me to blow pics up  poster size with quality?
Any help is appreciated.

I have owned a few of the G series cameras Ross.  The zoom sucks but the camera has lots of manual buttons to allow you to customize exposure, etc.  Sounds like that's now what you want, however.  I don't think there is a camera that fits your bill and shoots raw.  Any camera can be put in green box auto mode, however...  No crop camera p/s is going to give you great quality.

Is there a particular reason why you want the RAW capability?  Unless you have good photo editing software and know how to use it, that would be the only reason to shoot in RAW.  I know pros who just strictly shoot in jpeg with high end cameras cause it works for their end product.  You can achieve great results with the jpeg format and blow it up to poster size depending on pixel rating of course (most cameras today have plenty of pixels to exceed 8x10 in sharpness).  Choosing the best camera depends on what your photography goals are.  Your cannon will probably fit the bill just fine if you pick up some decent lenses for it.  Unless you want to get into fancy action photography, the auto mode does a good job most of the time, until you can learn the rest of the features of the camera.  Documenting wildlife by snapping a photo is one thing, purposely pursuing wildlife with photography equipment is totally something else.  As for the video capability, the slr's are pretty spending to have both.  I've seen some pretty nice still photos taken from video, so you might just consider packin a video cam.  A good place to research slr's and video cams is B&H video-photograhy, just google it.

I shoot with a Nikon D5100

Its a large, full body camera. But, once you shoot pics with one like this, you will never go back to point and click cameras again. I can take video with this camera. Another plus, is that older lenses will fit. You cannot use older lenses on a Canon.

Nikon 1 series, awesome little cameras, not cheap though.

I have a few ideas for you. Ive been playing with these two cameras for awhile everytime I come to the store. Theyre waterproof, shock proof, and dust proof which to me makes them great "hunting/outdoor" camera's.

Check out the Fuji XP 2000. It's a pocket camera. It's my new outdoor carry camera.
