Title: BBQ Wings

Cooked 40# of BBQ wings and 5# of BBQ pecans last weekend at the BBQ Blues and Brews on the Bay in Coos Bay Oregon. The wings were for public sampling and cooked on a WSM 18 and GMG Jim Bowie.
We ended up 16th out of 31 teams. It was a tough field with some of the best BBQ teams in the Pacific Northwest and a team from Texas.

I love some wings and don't claim to be at that level but here is my tip. Rub the wings, sear, and cook with inderect heat for at least 45 minutes to an hour. Then sauce and color up over higher heat. For me it yields moist meat, great flavor, and fall off the bone eating.
