First attempt at smoking cheese.  Figured I would go the economical route just to make sure I like it before spending money. 

True Redneck Ingenuity!!   :chuckle: :chuckle: :chuckle: :chuckle:  It even comes with a temp gauge.   :chuckle: :chuckle:

OK.....first batch was smoke with a blend of Hickory, Maple and Cherry.  It smoked for about 3 hours (maybe too long) and it is very smokey.  I like it but no one else in the house cares for it.  Next batch will be done with cherry wood and smoked for 1-2 hours max.   

This batch may mellow out a little with time...we will see.  If it doesn't I will use it on burgers which should be delicious.

You have to let it sit for weeks before eating. Eating right of the smoker taste like an ash tray. I won't give any any of my evoked cheese until after exactly one month vacuum sealed rest in fridge. I personally will eat it three weeks after. The longer sir the better. The stuff you buy  in stores has rested a year. I just finished another 30 pound batch, mid Feb is when I will start gifting it away.

That is great to know....maybe my wife and kids will eat it in a month.   :chuckle:   Do you leave it in the fridge after vacuum sealing or freeze it?

Yeah, I pull it out, let it rest for a bit, vacuum seal, date it and place on fridge. Here is an old thread of mine. Nice Johnny, sounds like it worked for you and 92xj has some tips for storing serving. Now go find a little refer to replace the cardboard box. LOL
I used my x-mass gift from you cutting kindling for my mother-in-law today. She wanted to know why I was polishing it when done, I said it was a gift and I need to keep it looking good.  :tung:

I am going to do another batch tomorrow with Cherry...if in a month I like it I will be building a wood cold smoker box.  The traeger produces plenty of smoke with my new pellets....man I love the new pellets.  :tup:

I am reading Sniper Elite right now.  Finally starting to have a little free time.  Glad the hatchet worked and glad to hear you keeping it polished.  I am afraid to use mine...they are really pretty.  :chuckle: :chuckle: :chuckle:

Yeah it was on smoke and it worked amazing....lots of smoke made it to the box.  Internal temp hovered around 68 degrees.  I live right down the road from you, I will drop a pack or two by one of these days if you want to try it.  Only request would be you wait a month before opening and give honest feedback when you eat it.

Ive done something very similar but I used my scent smoker instead. It worked great.

Take a look at this product for cold smoke. You can use it with the Traeger or in a smoker box as long as it sits on metal and not wood. I have an upright metal gas smoker and have used it for cheese and nuts with great results. You can still use your pellets with it. We put our cheese in zip lock baggies for three weeks to let it mellow like stated above and the same with the nuts (almonds, walnuts and pecans). Have fun!
