Title: Duckeroni Sticks Yield

I'm going to bring my fowl to the smokehouse this year to get some pepperoni sticks made up.  What kind of yield can I expect?

It depends wether you are having them mix in other meat, ie pork or beef. I got over 100lbs last year because it was mixed with pork.

Thats what I do with most my duck meat but I think I am going to make some brats this year instead  :EAT:

I do my own it's pretty easy. I recommend using only pork. 20% pork fat is recommended for most recipes. Last year I made duck/goose/pork brats, summer sausage, and pepperoni. Also was my first time doing pheasant and pork jalapeno sticks.

I use pork in mine also. I take all my duck and goose in with a pork butt and have them make Jalapeno Cheddar Duckeroni. Its a big hit with most people. Especially the ones who claim they hate duck and goose. I have also had them make Brats, and they were pretty delectable also.  :tup:
