Title: From the beach to the fryer

Took my son clam digging for the first time and he is hooked....we had a blast...we both got our limits and came home cleaned them up and made some clam fritters  :drool:

For those of you that have never had clam fritters its a must try.
Grind up your limit of clams
Add 1-2 eggs with a splash of milk
Add a little flower with salt and pepper to taste and some diced onions for flavor...mix it up well...put some oil in a pan and take a little scoop and try to fry it....if it falls apart add a little more flower...you want them to stay together when friying otherwise its a mess  :chuckle:

Tentatively planning a trip at the end of the month. Can't wait. Looks like you had a good time and I will have to try the clam fritters out for myself. Also gonna hopefully go for them surf perch to. Can't wait

I've never been able to bring myself to do anything with razor's other than just breading them with ritz crackers and frying.  Probably one of my top three favor foods!  Sooooo gooooood!!!!!!!!!!!!!!!!!!  Fritter's look pretty good though, solid work :tup: :drool:

Thanks for sharing and thanks for sharing that experience with your son. Some of my best memories of childhood were when my dad took me out fishing.

The wife and I are going razor clamming for the first time this weekend. Hope the learning curve is short, cause we're hungry! Might go after some surf perch while we're in the right area, too.

With heavy rain predicted, diggins gonna be way tough. All that pounding rain and water on the beach. Clams dont like to show.

Just gotta look harder, dig in the water and closer to tide...I went out and it was pissjn last sat and had no problem getting my limit

. I'm gonna take you up on that!  We stay at a friends beach house in Westport when we dig.  I haven't done night dig since we had kids.  Small kids, darkness, and sand don't mix well :chuckle:  once they switch to day digs we will be hitting a few.

Yea we always just fry them or clam chowder or... a million ways we've had them just not like that lol. Might be a reason to get a grinder finally  :chuckle:

There are a couple before Grayland, and couple at Grayland, and a couple south of Grayland. If you get to Tokeland you went to far. Basically what he's saying is find the beach, it doesn't really matter where.

Oh, about 15 minute limits and that was being picky looking for big ones. If I'd dug little holes, could have had limits in 5 minutes.

We were in the exact same area, but got there about 2:00pm. Five limits of clams and then helped my buddy and his wife as it was their first time.

Cut the diggers into bite sized pieces, season, flour and fry very hot in bacon grease until golden brown.  Mix these in with scrambled eggs for breakfast.  This is really tasty.

My brother likes to take cleaned clams and put them in the leftover juice from his favorite jarred pickled chili peppers. He lets them soak at least a week, and I have to admit, they are pretty good. He doesn't do anything else to them and after a week soaking, they just get better the longer you soak them.

I did the fritter recipe also. Simple, and turned out really tasty. I substituted Krusteaz for the flour though.

I do my fritters a little different. I chop the clams, instead of grind (maybe I'll try to grind em next time). Chopped clams go in a mixing bowl with a couple eggs, then I cook most of a pack of bacon (chopped into small pieces) and a finely chopped onion in the same pan. All that, including the bacon grease, goes into the mixing bowl with the clams and egg. Then I add crumbled saltines as a binder. Form into patties , season with a little garlic salt and cracked pepper, and fry them in olive oil....it's true: bacon makes it better.

I have literally never met a person who did not like properly cooked fresh razor clams. Get him to try some.

I grind the necks for chowder, fritters is a great idea for them too. Same flavor as the other tender parts, but tough as rubber.

Need to get my crew out this year. Had me and two boys last year, me, wife, and 6 kids this year! Glad I found out they freeze cleaned and sorted just fine!

If you put them in plastic containers with 50/50 milk/water they freeze great and last a long time  :tup:

For the first time in a long time I have 0 clams in the freezer and my mouth is F*ing watering right now. Flour , egg wash ,  cracker meal/ crushed saltines and quick fried in canola is my favorite. With tiger sauce, a sweet hot sauce you can get at the beehive, Duffy's and most grocery stores ( it's delicious on pretty much anything). I also like fritters for a change . Good gawd I need to get out for some fresh razors.

I vacuum seal the diggers raw for future fries.  Everything else gets either canned (Icemans Smoked Razor Clams for half of them ALWAYS) or pressure cooked, vacuum sealed and frozen.  I love eating them almost as much as any of our caught/killed stuff.

I grind the necks for chowder, fritters is a great idea for them too. Same flavor as the other tender parts, but tough as rubber.

Need to get my crew out this year. Had me and two boys last year, me, wife, and 6 kids this year! Glad I found out they freeze cleaned and sorted just fine!

If you're necks are tough, you're cooking them wrong. Hot and fast is the secret to tender necks that you can cut with a fork. Get the oil hot and just cook long enough to brown each side.

How hot and how fast?  I cook mine in the oven most of the time on broil for 1.5 mins then turn them over and cook another 1.5 mins and the necks are far from tender.
