Well, after talking about it for years with my buddy it finally happened. The other night we broke down and tried Coyote. I shot one that morning and we decided to try it. I cut out the back strap and after I picked all the fleas of the meat we seasoned it up and gave it a shot :puke:. It was surprisingly really good :dunno:. I wanted it to be nasty! I wanted it to suck! Well, it didn’t. I’m still not going to make a habit of eating them but it was worth a shot.
Tonight my friend is going to kill the opossum that he trapped the other night and we are going to try it. I’m gaging just thinking about it right now. Wish me luck. I’ll try and post some pictures as it is happening.

Well done all the way. I remember a guy one here that made coyote for his family and took pictures of it. He ate it med. rare at best. That was nasty!!!!

got pics of the coyote meat, processing and cooking? especially want to see the flea's in the meat.
If no pics this go around then may I suggest a repeat with a new coyote and lot's of pics :IBCOOL:
Once you've gotten past coyote and possum I think the next is nutria, then on to Norway rats on a kabob.

I have a few of the coyote i'll post later. I'm at work right now.

Yup they are nasty! Not looking forward to tonight! Cant be worse than bear steak though.

Don't know what bear you ate but fall berry bears are every bit as good as some of the best beef I have eaten. After saying coyote was decent I have to believe your bear steak must have been half rotten. I have eaten parts of dozens of black bears and three different brown bears and I never had one that was worse than strong rut buck :dunno:
I ate river otter one time and it was not too bad, more the thought of what I was eating than anything.

Opossum is delicious! The best way to butcher is NOT to gut but to just carve the quarters off the carcass. That is were all the meat is at, AND it avoids the stinky disgusting process of gutting them needlessly. You end up with 4 leg and thigh combo's just like chicken but only better!
Its been a while since ive seen one but i whack everyone i get a chance!

I learned to cook possum from Wooly, an ol' boy down south who eats them as a normal part of his diet. Here's what he says you gotta do....
"Ok you are supposed to feed him sweet taters in order to get the filth they normalcy eat neutralized. Then you add candied sweet taters also called yams around the poor baked critter to mask the possum smell. Never eat a possum you have not purged they eat dead meat as well a green persimmons you will pucker and puke."
I believe Wooly. He's never lied to me yet. He also says you have to cook them whole to get the real flavor of the critter. Here's what it looks like. Ours was a little well done. It wasn't bad, though. I would never try coyote. They eat too much dung.

I would have to say this is something I've thought abou a lot. Just can't bring myself to do it! Knowing you say its good makes me think it's back on the list of things to eat if I'm starving but till then I'll pass :tup:

I will definitely try coyote. I don't think it would be that bad as long as they're not wormy. Oppossum is a different story.

Smossy has been wanting to try it too for a while.. I have a feeling when he finally gets his first 'yote I'll be forced to try the dang thing too >_<

A long time ago, when I was living in Maine, I was told that the prisoners were fed lobster because most people felt it was barely suitable for human consumption. Ain't that funny? Well, crabs & lobsters are bottom feeders after all - and they command a darn good price at the market nowadays

My dad grew up down south - in Alabama, and has eaten possum, raccoon, squirrel, rattlesnake, goat, and probably some other things I can't remember. I sure would like to find a good cookbook that covers things like that. I've had goat and I liked it. If I have to trap and 'purge' a possum with sweet potatoes, then that's what I'm going to do. I'm not thinking of eating any mice, rats, or that sort of thing, but I can certainly imagine yote jerky.
Then I need to find a good book on how to use the hides of the coyote and raccoons to make some clothing. I've seen coyote coats going for $1800 or more. There has to be some way we can learn to make good things from these critters we kill.

I might try it again in these circumstances, mine that was shot eating a beaver was the nastiest thing I have ever tried.

The world does not want me to eat this beast! It escaped from the live trap somehow. My buddy was holding it and feeding it cereal for a few days and it got out last night. Traps are out and trying to catch another.

When I was trapping , roast raccoon, stewed muskrat with dumplings, beaver liver and onions, beaver jerky and beaver stew were daily fair along with grouse, rabbits, venison, turtle, crayfish, northern pike, river suckers and carp. Never had anyone get up and leave the table.
Living in Taiwan for a while and eating on the streets everyday, I never had a meal I didn't like and know they included dog, cat, snake , herons, carp, squid, octopus and many items do to communication break downs I never did find out what they were.
I have a firm belief that it isn't what's in the dish but how it is prepared is the measure of the meal.

I'll probably serve it to my buddies first though, just to see how they do.

I've only eaten east side yotes that feasted on apples, ducks, and pheastants. I think that opossum I'd crossing the line though

I would never eat a furbearer liver...too many diseased critters

I'll have to tell my Filipino friend at work about this. He said they eat dogs back home. They like to hunt and maybe they will put a hurtin on those dogs on the east side.

I'm working my brain out trying to think of something worse to eat than yote and opossum. I can only come up with rats, nutria, and maybe a mountain beaver. Please keep me posted when you start cooking up one of these tasties.......
