No point in shooting 60 for deer and 70 for elk.  I've killed plenty of elk with my 63# bow.  Save yourself the trouble pick a weight and stay with it.

I'm a 27" draw and I'm shooting goldtip 5575 xt's with a 125 grain head.

Pick a poundage and pick a weight of broad head. If 3d is a concern then your probably wanting to go light as you can for a hunting arrow. The law is 6 grains per pound of draw weight, so for a 70lb bow you need a 420 grain arrow to be legal. If you'd pick a poundage it'd be very useful for the weight issue and how stiff of spine you'll need.
