What are some of those fast and easy dinners on busy night everyone makes? Always lookin for different ideas :tup:

Tuna bagel
One can tuna mixed with your choice of sweet or dill pickel relish, mayo, a little dab of mustard and some pepper and red pepper flakes. Spread half the mix over each half of a sliced bagel. Place in the over at 350 for 10 minutes. The last couple minutes melt a slice of cheese over the top. Absolutely delicious.....one of my favorite quick easy no mess dinners.

We do breakfast for dinner a few nights a month around here. Pretty quick and easy to do waffles or pancakes. I also tend to keep a few mountain house biscuits and gravy in the pantry. They are quick and easy and tasty enough :chuckle:

If possible, meal prep Sunday evening for a couple meals. Pre make one or two meals and then cook something in crock pot that you can reheat. That's 3-4 suppers right there.

One pan meal. Fresh veggies sliced/diced, microwave white or brown rice, your favorite protein diced or sliced and cooked first, and then add you favorite sauce and spices. For an extra special treat, fry an egg and throw on top when you serve and let the yolk run all over it. :drool: :drool: :drool:

Grab a package of wraps, some precooked chicken, cheese and veggies. Wraps are a staple for me when I am in a hurry.

Another one I do is a hamburger gravy on boiled potatoes. If you have it available, a quick flash fry some seasoned salmon chunks and throw it on some romaine or Bibb lettuce with red onions, parmesan, croutons and Caesar dressing.
If you could tell me what kind of material you usually have available in your house, that would give me a better idea what ideas I could give you.

Late dinner, early breakfast. Same thing. This is what I eat when I'm going to hunt all day and possibly cover miles in the cold. I don't get hungry, don't even think about food after eating this.
What you need:
2/3 or 3/4 cup Albers Quick Grits
1/4 large yellow onion
1/4 stick butter
1 or 2 Johnsonville smoky brat or Italian brat
two pickled jalapenos plus a couple of the included spicy carrot slices (La Costena comes to mind)
salt
whatever else you want to throw in (a fried egg, fried spam, cheddar cheese)
What you do:
Slice onion and jalapeno "French" style (long slices), slice the brats banana style.
Cook the grits with appropriate amount of water (instructions on box) along with onion.
When grits thicken and are no longer soupy, add remaining ingredients. Stir. Serve in bowl to retain heat.
Enjoy the "Captain's Breakfast" and know that you've consumed enough calories to kick butt all....day....long.

Burgers are a staple. We change it up by changing cheese (blue cheese, cheddar, pepper jack, Swiss, etc) and other toppings and making sliders (hint: Hawaiian rolls) so you can mix and match. Or steak, tacos, spaghetti, casserole, brats, bbq fish (salmon or bottom fish), sloppy joes, or soup and sandwiches.
I'm interested to see what others do because my wife and I both work and always feel behind the 8 ball when we get home with 3 hungry and tired kids. We have talked about planning better for years but it seems we will continue to fail at that forever.

Can of Spam diced and fried until golden brown edges and a quart of egg beaters, nothing better :). Even works in the duck blind one pan and your done.

This is what I call a super potato. If you have left over baked potatoes or you can boil up some potatoes. Place the potatoes on an individual plate for each person. Put some chopped onions, broccoli, butter, sour cream, chopped ham, bacon, beef, salsa, baked beans, salt, pepper, etc. You get the idea, what ever you desire or laying around in the frig. Then cover with foil and put it in the oven on 375 for around 30 minutes. Take the foil off and put you favorite cheese on top at the end.

This recipe has ingredients that most people have in their house already. I'll pick up a couple of chicken breasts out of the deli or a rotisserie chicken to use in this. It's super easy, super flavorful and amazingly filling.

We do a lot of large individual dinner salads. Like I mention earlier, the salmon Caesar salad is super easy and filling. Obviously a guy can substitute it with other kinds of fish or chicken too.
Cooked chicken breast on bibb, romaine or leaf lettuce with avocado, tomato, red onions and croutons, with your choice of dressing.
" " sliced up pears, bacon, avocado, red onions, walnuts or pecans, croutons and blue cheese dressing.
" " sliced up left over steak, tomato, red onion, blue cheese crumbles, croutons and blue cheese dressing.
Or a mix and match wildcard cobb salad using Iceberg lettuce with your choice of copped up lunch meat or left over meat, boiled egg, shredded carrot, tomato, pickled beets, garbanzo beans, bacon, onions of any kind, avocado, cucumber, cheese, olives, zucchini, sun dried tomatoes, red or green bell peppers, croutons, nuts, etc. I prefer blue cheese or ranch dressing on this kind of salad, maybe a thousand island or Russian would be good too.
The possibilities are endless with the big dinner salads.

If you don't have a bagel, an English muffin will do as well. You could add a slice of tomato on top before the cheese, that's good too.

One more before I get lost. English muffin, pizza sauce and pizza toppings (keep it simple) and cheese of your choice. Slap them on a cookie sheet and bake them for around 30 minutes on 350 or if you're in a rush, bump up the heat for less time.

You can't beat crock pot meals if you're short on time in the evenings. Okay, I'll go away now...

If quick and easy is your true goal, you can't beat meal prep man. Take an hour or two on a Saturday or Sunday evening and cook 2 or 3 different meals in bulk sizes and then package them for individual use. My freezer is full of them and it makes life so much easier.
Once a month or so I cook a giant batch of spaghetti and then vacuum seal it into meal sized portions. Its great to grab a couple out for dinner, or bring one to work for lunch. Same goes for chili. Huge batch, and then get yourself a bunch of the pint sized mason jars. Fill them to a half inch from the top, screw the lid on, throw in the freezer. I have 10 jars in there right now. Makes for great hunting meals too during the season. Its already frozen, keeps in the cooler great for a week +
At the beginning of any given week I will also grill 6 or 8 chicken breasts/thighs or a couple pounds of elk steaks. I can add them to some pasta and pesto for a quick evening meal, or just to chopped veggies and romaine for a great salad.

frozen salmon patties from costco. Throw them on the grill for 6 minutes serve on a bun with sliced tomatoes. quick, easy, no cleanup. Just did it last night and the kids enjoy them too.

Cut up some steak into stew size chunks and soak in teriyaki marinade overnight/all the next day. Toss the steak and marinade into the oven for 20 minutes or so, or until cooked to your liking. While the steak is baking, boil some elbow noodles, and make up your favorite brown gravy. Toss the steak & gravey on the noodles and follow up with a splash of teriyaki sauce... :drool: I made this for the first time years ago when we brought our first kiddo home from the hospital. I remember wife being a little skeptical of my concoction, but it has grown into a regular meal around our place.

Ground beef and onions, bag of tater tots, sliced mushrooms (I like fresh) can of sweet corn (drained) cream of mushroom soup thinned down with milk, and cheese on top is how I make it

This time of year with the favored Vidalia onions...Mix diced bear ham , diced onion, two cans of Bush's black eye peas, a little salt and pepper to taste. Toast some bread and spoon beans over the top. Takes less than 15 minutes for one of the favorite meals around this house.

Pita pizzas, just stick them in the oven (350 for a few minutes till the cheese bubbles) with your favorite sauce, cheese and veggies. The nice thing is that they are individualized.

OMG I thought I was the only person doing this minus the cheese. I can't eat wheat or soy or dairy but really wanted sloppy joe so I put it on spaghetti squash and my sister thought I was weird. that sauce is also good on roasted cauliflower.
I mostly do meal prep for the week on one of my days off so I have pre prepared rice, beans poached chicken and just have to chop some salad veggies or steam veggies. My favorite breakfast is a couple bites of chicken and half an avocado.

or go the real easy route and buy the seasoning pouch at any grocery store. Just make sure you have a fresh bag of Fritos and sour cream!

That looks good! Any kind of Asian style recipes/cooking styles are usually simple, quick, flavorful and light. They're my favorite.
Good ol' fashioned hard shell tacos are hard to beat as well.

I will only cook outside on the grill once its warm enough to stay outside. My staples for during the week:
Kabobs marinated chicken and beef with peppers, onions, and fruit.
marinated chicken
flank steak
teriyaki short ribs
burgers
for sides we keep it easy pasta salad and grilled veggies also keep a deep fryer at the grill station and will make some fries.

Good ol' fashioned hard shell tacos are hard to beat as well.
During busy times of the year I will make a double batch of taco meat, have tortillas, sour cream, shredded cheese and lettuce all ready. Dinner is 2 minutes or less. Good for those midnight nacho cravings too!

I like making a big batch of spaghetti sauce and canning or freezing dinner size portions.
I just picked up a package of pork butt and we are going to do a big batch of chili verde to can.
Also, Trader Joes has a pretty good frozen teriyaki chicken. Nuke it and some of their frozen green beans, while the rice cooker cooks the jasmine rice, and you're good to go.
These soups aren't a bad option. Brown and freeze some ground beef or italian pork sausage ahead of time.

For quick dinner, I do a pork blade steaks on the grill. Put some Johnney's seasoning and a nice BBQ rub. Heat the grill to 500 degrees and do about 4 minutes a side. They have enough fat to cook beautifully at high temps.
Then I do Jasmine Rice Singles with either corn or green bean singles in the microwave for 1 minute.
Saute some portabella mushrooms sliced thick in butter and soy sauce on high to get the glaze, pour mushrooms over the rice, yum!!
Start to finish less then ten minutes.

Dirty Rice. Grilled ham and cheese sandwich. Brats on the grill. Monte cristos. Sausage heros. Fish and chips. I do a stew in a pressure cooker but prep time does not make it quick.

Hot dogs wrapped in crescent rolls and a slice of cheese, follow directions for the crescent rolls to cook - 350 for 12 minutes or so.
Taco salads - used crunched up Nacho Cheese Dorritoes, put all your taco fixins on top and enjoy.
Frozen burritos smothered in a single-serving can of chilli and some cheese. This one usually makes me have to sleep outside... :chuckle:

Deli sliced roast beef, French buns and au juice... maybe some onion, bam, French dips in 15 minutes.
Canned pear halves, a dollop of mayo in the middle and shredded cheddar cheese on top. Sounds disgusting, but it's awesome. A quick side for a quick meal.

Breakfast for dinner. Make enough pancakes/waffles to freeze or keep in deli drawer, then pop in toaster. Nuke some Jimmy Dean brown and serve sausages. Those Ore-Ida Crispy Crowns are done in a frying pan in about 5-7 minutes.
One pan. One plate, plus eating plates/utensils. About 10-15 minutes total time, not counting the original pancake/waffle breakfast.

Got another idea I'm trying right now...took some marinara in a pan and threw some meatballs in it then out them on hotdog buns with mozzarella cheese on top then broiled them...pretty tasty meatball subs :tup:

Salisbury steak
meat patty
1 lb ground beef
2 tbsp ketchup
1 tbsp mustard
1tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
1/3 cup bread crumbs
Sauce
2 pack of brown gray mix
2 cups water
1 tbsp ketchup
1 tsp Worcestershire Sauce
Mix together the ingredients for the meat patty together then grab a hand full and roll it into a ball then press them out I use a little round sauce to make the patty even then pan fry them in a little butter. While your frying the patties mix the sauce ingredients together and once the patties are nice and browned add the sauce and let it thicken on low. I cook in a large cast iron skillet for best results. serve on some garlic mashed potatoes this takes under 30 minutes to prep and serve.

Before my pup passed we had a rough time getting pills down her throat. The tumor had effected the ability to get her mouth open enough for me to get my hand down there. She absolutely LOVED pancakes!! So I bought frozen pancakes by the bag from Winco. Didn't expect much from those as I hate Egos. Those Winco hotcakes are awesome! We now keep a bag of each flavor in the freezer for those quick "breakfast for dinner" occasions.

Taco salad. Ground venison/beef, taco seasoning, Fritos, salad, and cheese.
Meat, veggies, pasta. Toss some leftover chicken and frozen peas in with some pasta-roni.
Tater tots casserole. I made a big one two nights ago and still have some in the fridge. Ground venison/beef, mushroom soup, green beans, tater tots.
Soup! I love soups! You can make it from scratch, buy frozen bags that just require water, or buy the dehydrated stuff like bear creek and then add leftover meat and frozen veggies.

Crock pot is your friend.
Cook a pork butt and shred. Then you can make pulled pork sandwiches by adding new sauce and buns. Next night you can do tacos or burritos.
Cook a whole chicken and strip off bones. You can again do tacos or burritos. You can also use the meat for salads or soup. We also use it to make pot pie.
Home made soups in the crock pot. Navy bean, split pea etc
Ham steaks from Costco
Package of biscuits. Roll flat. Add shredded cheese and hamburger with manwich mix. Close like a calzone. Bake for 10-12 min.
Package of biscuits. Roll flat. Dab spaghetti sauce, pepperoni, mozzarella cheese. Close like a capstone. Bake for 10-12 min.
Beef stroganoff. Hamburger, sour cream and milk. Package of egg noodles.
Chicken pot pie. 4 Pie crust. Can cream of chicken, can cream of mushroom. Can of mushrooms. Bag of frozen mixed veggies (2 pie plates put Christ in bottom.beans corn carrots) shredded chicken. Cook veggies,drain. In big bowl mix ingredients, can add seasoning ie thyme etc. May need extra can of cream of.... In pie plate put bottom crust. Split mix. Add top crust. Bake til bubbly. Freeze other.

Rice is about the only grain I can eat. I cook a big soup pot of rice, then put it in freezer bags and freeze much cheaper than buying the frozen stuff.
Being a one person household and always having cooked for 4+ people, I freeze a lot of meals cheaper and better than the stuff you buy.

If you want quick and easy rice. Nothing beats a dedicated rice cooker, IMO, if I had not already mentioned it upthread. Set it and forget it.

If you want an easy one, make some Zatarain's Dirty Rice and stuff that in the peppers and bake.

I can't believe no one has said taco soup yet. It's all canned stuff, seasoning packets and ground meat. Easy and plenty for leftovers

We just bought an electric pressure cooker. Throw all your favorite soup ingredients in there and 20 minutes later you got soup. Noodles need to be cooked separately though. If you want something unusual, google "Hot Dog Soup". That was a new one.

Grab some thawed elk burger, and mix it up with your favorite seasonings in a big bowl and pan fry it. Lately I've been using salt, pepper and Greek seasoning, and for an added bonus I throw some mozzarella cheese in there, so it melts as the meat is cooking. Takes about 8 minutes to cook.
I cook 2-4 pounds at a time while doing this, have meals for a couple days, and then add some Spring Green salad mix to the plate as well. Don't need a bun at all! Pretty healthy, minus the cheese I guess, quick and super tasty.

Quickie Stroganoff
1lb venison burger, crumble browned and spiced to your pleasure
1 tub sour cream
1 can cream of chicken or mushroom soup
Mix all together and heat, serve over noodles. MMMMM one of our hunt camp favs.

We actually don't have a recipe. Usually a mixture of ground meat (beef or pork), egg, breadcrumbs, onion, and whatever else sounds good. I always have to google the temperature and time for typical stuffed peppers.
