If you want quick and easy rice.  Nothing beats a dedicated rice cooker, IMO, if I had not already mentioned it upthread.  Set it and forget it.

I'll second that, I loved my rice cooker, worked great for vegetables and stuff as well.

I cook for two. After I shop on the weekends, I'll sous vide two large chicken breasts to use later in the week. Usually one on salad, maybe one on pasta, or toasted chicken sandwiches.

At Costco, they sell a two tub Indian vindaloo and coconut curry. I usually buy one of those and a package of the mini naan bread. I get crab claw meat at Winco for around $8 and mix it in either, or use a large chicken breast - heat and serve.

Jalapeno and garlic-stuffed Olives with vodka.

Crab salad

I just found this post and read several pages.  I had to stop because all I can think about now is food!  (But not before taking some notes on things to try...)  :chuckle:

Some of our go-to weekday meals are

Spaghetti and meatballs
Chorizo egg scramble
Sausage and veggies, oven roasted
Pork chops and veggies
Crab (pre-cooked steam for 15 minutes)
Stuffed peppers
Grilled sandwiches and soup

Also interested in what other people are cooking for dinner. ;)

If you want an easy one, make some Zatarain's Dirty Rice and stuff that in the peppers and bake.

I can't believe no one has said taco soup yet. It's all canned stuff, seasoning packets and ground meat. Easy and plenty for leftovers

We just bought an electric pressure cooker.  Throw all your favorite soup ingredients in there and 20 minutes later you got soup.  Noodles need to be cooked separately though.  If you want something unusual, google "Hot Dog Soup".  That was a new one.
Look man, some times you just gotta roll the dice

Grab some thawed elk burger, and mix it up with your favorite seasonings in a big bowl and pan fry it. Lately I've been using salt, pepper and Greek seasoning, and for an added bonus I throw some mozzarella cheese in there, so it melts as the meat is cooking. Takes about 8 minutes to cook.

I cook 2-4 pounds at a time while doing this, have meals for a couple days, and then add some Spring Green salad mix to the plate as well. Don't need a bun at all! Pretty healthy, minus the cheese I guess, quick and super tasty.
