I went through the search and didn't find what I was looking for. Took my daughter to Idaho and we each got a buck. I took all of the meat that I would normally grind or can and froze it with the idea of having some sausage or pepperoni made. I think I want Landjager instead. Only problem is I don't know of any shops that make it since this is the first time I have decided to do this. I live in Toledo and was hoping that those who are in the know might be able to recomend a shop within a reasonable distance (say Olympia to Vancouver) that makes it.

I believe Uncle Jims Smokehouse makes it. I haven't tried that, but their pepperoni is awesome.

I had forgotten about Uncle Jim's. Just called them and they do make it, $4.50 a pound. That's only about 20 minuets away too.

I have nothing but good things to say about the quality of the service i have received from Lind's But i tried to take him about 40lbs of venison from last year to be made into summer sausage and was turned away because of supposed freezer burn and he couldn't do anything with it.It would be safe to say i was shocked but i bought some pepperoni from him anyway and took my meat home.I went and bought a summer sausage kit and made up the ten tubes that the kit supplied and it turned out absolutely awesome i have one roll out of ten left.Everyone i have shared it with loves it and asks for more.The point's being you could probably make it your self for a lot less and most likely just as good.I knew from taking deer there previously that he's very picky about the meat he takes in and that is certainly his prerogative but he lost me as a customer based on that pickiness considering there was nothing wrong or off about the meat i attempted to have him process.That being said he makes a fine product and mine came out just as good if not better.

Stewarts has the best landjaeger but it is made in Seattle by some other meat shop. I am tagging along on this thread. I want to find someone to make me 60-80 pounds of the stuff.

Actually happy to hear about a processor that's picky about the meat that comes thru their shop- their reputation is on the line about the final product. Bring them freezer burnt, blood shot, fatty, hairy meat ect- you're going to get crap back. A lot of processors will just run thru what they are brought - gross!
If u want good meat , bring good meat!
I do all mine myself so I know what I'm eating

Snyder's on west nob hill in yakima has made 40lb batches of duck landejager for me. You can get it with red pepper flakes if you want warm to hot.

I thought about that, but after looking into it I don't have the equipment to do it propperly. I'm going to take it to Uncle Jims Smokehouse after payday.

Check out the sausagemaker.com they have do it yourself kits and I have tried several and never had a bad experience with them.

Curious how this turned out? I tried getting some made from venison before and couldn't find anyone to do it. Love it. Bavarian meats is the Seattle company that makes what a lot of the other shops sell. Good stuff for sure.

I contacted Uncle Jim's to confirm that do make. Sadly That as far as I have gotten, as soon as I find a new house I hope to get this done.

Keep in mind that the stuff is really expensive to have made. Even when I supplied my own venison, it turned out to cost the same as buying it over the counter. Approx. $1.50/stick for the finished product. Equates to $15.00/pound last I had it done a few years ago. I think its a labor intensive process but the product is worth the effort.

The past few years I have used TNT Meats. I went to Uncle Jims this year. There is a definite difference between the two Landjager. Most of what I have made gets sent out to the Marine Security Force Battalion in Kings Bay, GA. They overwhelming have picked Uncle Jims over TNT...

I think Home Meat Services in Shelton makes it as another option. I haven't tried it from them, but I saw it on their price list.

They do my sausage and jerky, not sure about Landsjager.
Everything they do is good.
As a side note, I always clean up the meat really well before I bring it in. Care of the meat begins as soon as I approach the animal. Get it quartered, hung off the ground and cooled ASAP.

:yeah: I make all my own sausage but I have John make my Landjagers and Pepperoni. He makes the best I have had and I've tried quite a few. He is hand down the best.

I had a buddy complain about one of the butchers I use, but I have seen his animals. Hair in, hair out. I have showed him how to keep hair off, and then use a bone scraper, Scotch Brite or burlap to get it all... You know the rest of the story.

Use a hand held torch.

Olson' does not do landjaeger. I've checked with them in the past. What they sell comes from Bavarian Meats.

Bavarian Meats Landjager is the best stuff ever...It's something about the "snap" and texture of that stuff. Amazing. Does anyone actually think they've found a butcher who will do our wild game and have it turn out as good as bavarian;s?

Agreed, Bavarian meats is great. Olsen' said they can not get it to turn out as good with wild meat and that's why they don't do it. They do make great pepperoni.

Johnson's Smokehouse in Olympia/Tumwater makes it. Not sure if NW Sausage in Centralia makes it or not.

Well I finally got the chance to drop off my meat at Uncle Jim's. I brought in 47 Lbs of meat and split it between Landjager and Kielbasa. I'm disapointed in the Landjager. It's good, but tastes more like a dried pressed pepperoni. I guess I'm just spoiled by the Bavarian meats that I buy at the mini mart in Castle Rock. I like it but it's just not what I was expecting. I haven't tried the Kielbasa yet. Now that I have the Master Built smoker I might try my own next time. Uncle Jim's had great customer service and gaurenteed that I would get my own meat back. All said and done it cost me $220.00 I would definatly use them again for othe r products, one of my co workers said that they have the best terayaki pepperoni he has ever had.

Even Uncle Jim in Adna says that Bavarian Meats landjaeger is the absolute best. I have some of Uncle Jim's landjaeger, it is good but definable not as good as Bavarian. The next steer that I slaughter, 100 pounds of trimmings is going to Uncle Jim's to be made into teriyaki and country sticks pepperoni.

Polarbear, The place is Bavarian Meats at the Pike Place Market. I think everybody who don't make their own, uses them. It's the best and it's under $10 a pound. Eggers buys it and sells it for nearly $20 a pound. I used to have it shipped to me when I lived in Curlew.

Yeah. I talked to Butch who owns Stewarts and he told me that's where they get it and he can't come close to making it like them. As much as I HATE going into King County and especially Seattle, it might be worth looking into having them make me a 50-100 pound batch from my own beef.

I guess everyone's taste buds are different. I used TNT'S for many years only draw back was time it took to get made up. (Talking Landjaeger here). Switched to Uncle Jim's who has a very fast turn around time. Yes, it is different. I ship about 50 lbs a year to the
Marine Security Forces in Kings Bay, GA. They like Uncle Jim's much better. I am not going to argue with a Marine... Just my :twocents:

Also if you have a nice clean animal but the guys next to yours hanging is nasty it rubs off on yours. I've tried this landjager but just prefer pepperoni.
