My Dads over from SA and helping me. He asked how tall should it be. I said as high as I can reach. I'm 6,4ft so it's going to be a beast.

 Looks like you decided on a separated fire box. If so are you going with straight wood fire source?  Have fun  :tup:

I'm planning on figuring out a duel fuel set up. Predominantly cold smoking from offset burner though.

I built a propane one and use the amazing pellet smoker for cold smoking.

I do the same thing as Blacklab.  Depending on how cold I want it, my A-Maze-In smoker can keep my smoker anywhere from about 75 to 90 degrees.  Light one end, 75-80, both ends, 85-90.  Depends on the weather outside.  I've gone back to electric heat too.  More controllable for my big smoker than propane.

Cool good to know. I have an A-mazen aswell that I use in my BGE just want something with bigger capacity.

20/20 hindsight wish I would have. It's works great! Just with the insulation it would work better and more efficiently  :twocents:  ;)

My daughter told me that Grandad climbed over the deck railing and stood on top of the smokehouse roof today to show it would hold him... she said it wasn't a good idea... maybe the 70yr old should learn from the 7yr old. I sure hope I'm like my Dad at 70.

That would not be good.  I do like the roof extension, especially for the winter time.  The rain is often my smoking nemesis.  It's doable, but sometimes not too comfortable.

Are you going to bury the pipe or is that going to be running through your workspace in the lean to?  You may want to throw a couple elbows in the pipe and bury it in the gravel to keep floor space open.

It's going to have a bench over the top for storing all the wood on. It's heavy insulated stove pipe $350 a 3ft length and I found it at a property so I'm not worried about insulation.
