Title: Dutch Baby's. Anyone make them?
Post by: DoubleJ on January 25, 2018, 05:59:56 PM
I've been making a bunch of them.  The family loves them.  No pics at the moment.  Just wondering if anyone else makes them?

a big fluffy pancake.  like a german pancake.  You pour all the mix in a dutch oven or pie pan and bake it.

I'll have to look into these. Sounds like they would be good with sunny side up eggs on top?

We make them on occasion. Mix some powder sugar and cream cheese together and spread it on top and put some raspberries on top. Delicious.

They're really good with anything on top really.  They do have a sweet base but that shouldn't stop you

Here's the recipe I use.  I use my #9 cast iron pan

Mine come out kind of flat once removed from the oven but it's ok by me.  You can substitute bread flour to make a really fluffy one.

Good deal. I love those things.
I used to go to a place in Seattle long ago...They served them up with lemon juice, ricotta, powdered sugar, and syrup.
Looks like I have a project ahead.

I made one for the first time a couple weeks ago. Wife LOVED it. Made one last night for dessert. So easy to make. I'm gonna try a savory one sometime.

They are the best, one of my birthday traditions. About the only useful thing I learned in 7th grade home economics class.

I’ve started frying apples in the butter and then pouring the batter on top of them. Not that bad for you but makes it a little sweeter. Trick is to pour the batter in when the pan and apples are already hot so it gets crispy.

Yep, go to breakfast when the hens are laying mass amounts of eggs in the Spring.  I add vanilla to mine.

This was my first try in 2016.  I thought my 12" cast iron would be too big so used a smaller oven safe frying pan.  It stuck a little but was good.  When I use my cast iron now, I use 4 eggs plus 1/3 more of the other ingredients (original recipe called for three eggs).

I don't think so.  This is more of a sweet dish, plus eggs on eggs night be a bit of overkill....   :chuckle:

That is a good twist on them I have not tried. We normally use Corning ware dishes to bake them in That are 3" deep as the mix rises and then the center falls with the crust staying up on the ends. I will certainly try the fried apple cast iron trick.

I made one this weekend with an Alton Brown recipe. It was fair. Cast iron skillet in the oven of course.
What are the favorite recipes here?

Probably the same Alton Brown recipe you used.

What I like about it is that it seems like such a blank canvas that it is open to serious tinkering

I'd try it if I met a nice Dutch lady and my wife said it was ok.
