Title: Hanson Fish Co Group Buy #5 - Last buy for a while
Post by: Skillet on March 05, 2020, 08:21:08 PM
Corona Virus Update 3-16-20
As much as I don't want to, I'm going to suspend this group buy for a few weeks at least. The level of uncertainty with my traveling back and forth from AK, and within WA state while I am there, is too high over these next few weeks.  I will send a text to each of you who ordered tonight to see if you still want me to hold on to your order for when I am able to make it back down.  I am attempting to reschedule some commitments I have to allow for a potential Washington speed run sometime before my July king opener up here.

Thanks everybody for your continued support and understanding.  The reaction to the virus has been far more dramatic than I thought it would ever be, and I'm trying to make the best decisions I can for both my loyal customers and my own business.

I'll be sending the texts out tonight to check in on everybody who still has orders with me.

Thank you,

Chris Hanson

Hey folks, I'm going to be in WA for a few weeks in late March/Early April and would like to offer up one more group buy before I get real scarce for the summer.  I'm sold out of a few things so the offering isn't as extensive as my last buy, but hoping this should keep most folks covered until I can get back and fire up another frozen fish group buy next winter.  I do have a very limited new item I got from a customer up here that I can sell cheap this time around - Cooked Dungeness Crab Clusters from Alaska - see details below.

We'll be doing the orders and drop-offs a little differently.  The first, most important change is I can't confirm an order unless I get a cell phone number to contact you on.  Communicating through the site is great, but when push comes to shove I need a better way to stay in contact with you. My cell is 206-579-6715. Feel free to send me your order via text if you like.  If you order on the site, I'll PM you for your cell.  Easy deal.  If someone is uncomfortable with this, or doesn't have a cell, please let me know and we'll see if we can work something else out.

The second change is that the following locations will be the designated drop off points.  I will update this with dates, times and additional locations as soon as I get my schedule figured out, so we all know before the sale is final.  I think this will be better for everybody.  You won't have to wait until the last minute to find out where to meet me, and I won't have to make a bunch of smaller stops to cover everybody - or drive right by one.  If the locations below could be improved upon, let me know - I don't mind changing them up early, but as people order I want them to know where to go before they commit to buying.

Locations:

Spokane Valley - Albertsons on Highway 27 on North side of lot
Spokane North - Safeway parking lot on Francis and Monroe, just east of the Fuel Station
Moses Lake - Walgreen's parking lot on Stratford and E Broadway
Ellensburg - NW Corner of Super 1 Foods parking lot
Tri Cities - HAPO Center parking lot (formerly the TRAC)
Yakima - Burger King on East Yakima Ave off I-82
Issaquah - T Mobile parking lot on 12th and NW Sammamish
Bellevue - Safeway on 150th Ave and I-90, north side of lot
Bothell -  Chevron parking lot on NE 195th St and North Creek Parkway
Marysville - Haggen parking lot in Plaza 88 on 88th (we've outgrown the Buzz Inn, fellas!)
Burlington - McDonald's parking lot off the freeway
Bellingham - Fred Meyer Fuel Center parking lot on Lakeway Drive and I-5
North Seattle - Northgate mall parking lot by the Key Bank on NE Northgate Way ad 5th Ave NE
South Seattle - Southcenter Hampton Inn on S 156th and West Valley Highway
Auburn - Subway parking lot, 15th and W Valley Hwy
Graham - Safeway parking lot, SE corner
Fife - Sportco Parking lot
Olympia - Martin Way Park and Ride off Martin Way and I-5

Spot Prawn Tails, IQF

As before, I have some Individually Quick Frozen spot prawn tails for sale.  They're running a bit bigger this year than last year on average.  Going to do them by the box, bag and case.  Boxes are now 1 kg (2.21#) instead of 2.5# to meet commercial expectations.  Bags are the same as last year, and the case is a deal for the guys that want to split up a batch among friends.

*I've only got 300# left as of right now, and have a few commercial customers that are still calling me for a case here and there.  As soon as I've sold out on these I'll post up a notice

1 kg box (2.21#) = $35, 2 for $65 (Out of the 1 KG boxes)
4lb bag = $55
50# case = $650

Ocean Troll Chum Salmon, FAS carcass

Really nice ocean chum salmon, Frozen At Sea.  Headed and gutted, fish carcass sizes range from 3.5# to just under 10#.  Treated exactly the same as my kings and coho - pressure bled, frozen immediately and glazed.  I catch a few of these every year while king and coho fishing, and have a small amount I haven't yet sold.  Chum have gotten a bad rap over the years, but these dime-bright ocean fish will impress.  I'm offering these up here because I think there's probably a group of folks that want to put a big smoker load project together, or maybe some folks that just want to try them on the grill.  I've pickled them with great results as well.

The FAS Chum is priced at $4.50/# by the fish, $4/# for 50# and up.

Black Cod / Sablefish

Product of my co-op in Sitka.  As mentioned in some posts below, Sablefish are very rich.  They have a high fat content and it is a super tasty fish.  These are deep water fish, hook-and-line caught out of anywhere from 1200 to 5000'+ feet deep.

These portions are pin-bone-out, skin-on, 5-7 oz portions in a vacuum pack.  I'm offering these by the pound or by the case.

Sablefish vacpac portions, PBO, skin on, 5-7oz = $15.00/#, or $140 for a 10# box (contains about 25 portions).

Halibut

A product of my co-op in Sitka.  There's a fair chance some of the halibut I caught this year ended up in these vac-pac portions.  These are cut a bit bigger than the sablefish at 7-9 oz's per vacpac portion.  North Pacific hook and line caught halibut, processed in Sitka close to the grounds. No skin, no bones - easy meal prep!

Halibut vacpac portions, skin off, 7-9oz = $18/#, or $170 for a 10# box.

Albacore Loins

I'm pretty excited about this one - the Cooperative is letting me have a shot at the FAS albacore loin stock.  A bit of information regarding these loins-

Albacore is landed in Washington one of three ways - fresh, brine frozen, and Frozen At Sea.  Fresh is self-explanatory, but the frozen types are quite different.  Brine frozen fish are caught, bled and then tossed into a super salt saturated liquid brine tank that is chilled down to -10 degrees F.  These fish are destined for the canners.   Our FAS fish are caught primarily on jigs, bled and then hung by the tail in the blast freezer.  This creates a ram-rod straight fish.  They are then offloaded to a processor who actually bandsaws the fish while frozen into lengthwise quarters, then literally grinds off the skin and backbone!  The full sized, clean loin is then vacuum packed frozen - so they never thaw out from the first freezing.  This makes a huge difference in the quality of a delicate meat like albacore.  These loins have not been available to us members for two years, so getting access to them now that we've had a good tuna year is pretty neat.

Washington Albacore loins, vacpac = $11.25/#, or $230 for a 22# box

Smoked Coho gift pack, 1# portion

I went to a different smoked fish processor this year, and the packaging is a little less fancy - but I get to pass a bit of savings on to you folks that way.  This is your standard 1# coho filet, smoked and packed in a foil pouch.  Multi-year shelf life, great to send as a gift.  Next year I'll have my own box made for it, but this year it's a standard gift box and the price reflects that.  This is a

Smoked Coho gift pack, 1# portion = $22 each, 2 for $40.

Ocean Troll Coho Portions

Another Cooperative product, and something I may have supplied product to produce.  These are 5-7 oz, skin-on, pin bone out, vacpac coho portions.  Easy meal to deal with, and these portions are great for those smaller meals.  All hook and line, no nets.  You know the deal!

Ocean Troll Coho Portions = $12.50/#, $115 for a 10# box.

Alaskan Dungeness Crab Cooked Clusters

SOLD OUT

A new offering, I am helping a customer of mine clean out his cold storage.  These clusters are from 2018, so they are discounted to make room for the 2019 stock.  So if you’re willing to take a flyer on a great price on cooked crab clusters, jump on it fast.  I’ve only got three 25# cases.  I’m selling in 5# lots, or whole 25# case.

SOLD OUTDungeness Crab Clusters, cooked and frozen, $40 for 5 lb bag, or $175 for a 25# case S  (If we decide we like this and want to keep doing it in future buys, I’ll need to raise the price quite a bit. This is a one-time buy at these prices, just an FYI).

Thanks again for the interest and spurring me into doing another group buy before I get serious about the boat work to get ready for the next salmon season.  They're swimming our way right now... I can smell em! :chuckle:

If any of you haven't had the opportunity to eat some of Chris's fish you owe it to yourself to try some. I handle and sell a lot of fish. Chris's is some of the nicest available. If anyone is curious about the ocean bright chums, these are not your typical Puget Sound chums. These are beautiful chrome troll caught chums. Very nice. **UPDATED,...again.....and again, this was the last one I think Chris.**

Great news on Buy #5 Chris.  And just think, some of us may have been starting to run low and wondering what the heck we would do until next winter.  I don't see a Kitsap Peninsula location for this one, yet I do understand your delivery schedule and route, I'm sure I'll find a place to meet you along the path.  I'm placing my order right now, but I believe I'll add to it in a couple hours, I have a couple buddy's that have had "your fish in their mouth" and they are fans now as well.

I'll jump into the following:

2 BX of Halibut @ $340
3 BX of Black Cod @ $420
5 BG of Spot Prawns @ $275
1 BX Coho Portions @ $115
2 BG Dungeness Crab Clusters @ $80
1 BX Dungeness Crab Clusters @ &175

Total @ $1405

That's all I have for now, one more potential update, if so it will be soon.

Thanks again for this service Chris, we all appreciate it more than our taste buds can say!!!!

I am all good for now as I have some bottom fishing trips coming up. Keep me on the list though because I'll be ready to buy next time around.

Chris's product is very good and those who haven't tried it won't be disappointed. Buy with confidence.

Skillet,

Do you know when you’ll have your dates finalized? I’m definitely interested in getting in on this buy, but I’ve got a couple trips planned late March and early April.

I’ve got some anxiety about the current state of my freezer and would love to top it off.

Good question.  I've got a few things I'm still lining up while I'm down there, and my time will be fairly limited.  Right now, I'm looking to try and get this done between March 25th and the 31st.

We might have be able to see if someone will hold it for you to pick up at a slightly later date?

If you are in Seattle I'd be happy to hold product for you. I have access to a commercial walk in freezer in Seattle.

Skillet,

Jackelope was kind enough to offer to grab the fish for me if I’m out of town.

Although if Fungunnin is also on your route and is able to hold it, that would work perfect for me. @Fungunnin, the longest I’ll be out of town this month is three days at a time—but in all likelihood I’m only going to be gone for a day or two at a time. Would that be ok with you to possibly hold it for up to 3 days?  If you’re still at the same spot as last year (I got some tuna from you), I drive by there every day and that would avoid Jackelope having to make space in his freezer for me.

@skillet, Can I please get the following:

A 10# box of coho.
A 10# box of halibut.
A 4# bag of spot prawns.

Chris,

Numbers bumped a bit:

'But - 3 boxes
Crab - 5lb
Shrimp - 8lb
Smoke Coho - (1) 2pk
Chum - 1 fish
Coho - 2 boxes

I'm at $894.50 (assuming 5lb Chum) - let me know if that's off.  This will probably climb again in a bit.

If anyone is thinking on getting some tuna do it! These loins are packaged great, beautiful meat, amazing taste! My family’s favorite we do home frys and deep fried tuna. Super simple and a awesome dinner. Pic of what one loin looks likes after cutting into steaks to deep fry.

End result!!! Super crunchy beautiful deep fried fish.

Cut loin into steaks around 3/8”
Dip in flour “seasoned” if you like
Dip in 2 cups milk 2 egg wash
Dip in Panko “can be regular bread crumbs” Panko is just better crunch.
Into the oil 325 for a few mins until internal hits 170

Boom! Dinner of champions lol

Indeed the wife makes homemade tarter sauce. I eat a lot of it just as it comes out the fryer nice hot and crunchy. Stays nice and moist and such a great flavor.

Me neither but there is a place in seaside oregon called grizzly tuna all they do is deep fried tuna and fries. The place is always busy it’s small kinda like a coffee stand. Few years back we said let’s try it. Now we hit it like 2/3 times when we are down there. So good. So after seeing Chris offer up loins. I said I’m going to learn how to make it. Few trials and boom perfection!

Title: Re: Hanson Fish Co Group Buy #5 - "Corona post"
Post by: Skillet on March 12, 2020, 11:02:38 AM
Corona Virus Update:

I’ve been reading a bit of the Corona Virus thread and feel like I need to share my plans for minimizing the risk of transmission to both myself and the rest of you.  I am open to all ideas as this develops, up to and including cancelling this group buy if the majority of folks think that would be the best idea.  I don’t make much on these Group Buys, it’s more of a fun way for me to help people access high quality fish at good prices and say “thank you” to the HuntWa folks for helping me get my retail business off the ground.
My plan to minimize risk of Covid transmission as of now:

Minimize physical contact – no handshakes, etc.

I will be wearing a fresh set of latex gloves at each stop.

I will be using Clorox wipes to wipe down the back of my truck and freezers after each stop.

Ask for electronic payment via PayPal “friends and family” when possible.

If electronic payment isn’t an option, then a check will be best.  Handling cash is not something I want to do, but if that’s how you roll please bring exact change.  I don’t really want to be handing change back to one of you that was just in someone else’s possession.

Minimize the time at each stop.  I do really enjoy meeting and chatting with you all, but I think this time around we’ll keep it very short.  Hopefully next time we get to make up for it.

Obviously, if you feel sick for the love of God let me know and we’ll figure something out.  Please be prepared for the chance that I get sick as well and need to cancel this Group Buy.

If you want to cancel your order before I close the ordering period on Saturday evening, no problem at all.  Just shoot me a text and I’ll confirm it back.

Does this seem reasonable?  Open to suggestions.

Thanks!

True to a degree, Ridgeratt.  It is a concern for sure.  I have a very hard time with the idea of pulling the plug on a group buy that folks are counting on - especially if we all can agree on the measures to prevent spreading this thing. If I was doing a random farmer's market type of thing, I'd cancel.  I think we can still do this because of its limited scope, and I believe I can trust the folks I meet up with to be responsible.

Chris,  here is my two cents worth.  Great plan and roll out of your safety concerns, but your safety also very important, this is what you do.  OK, now what?  I would caution everyone that we might very well be in for some rough sledding soon.  That said, I wouldn't be banking on this delivery as a done deal as many moving parts are taking place all around us.  I don't know what is involved with getting the product here to Washington, but I would be very concerned with such a large delivery and what could go wrong.  I hear there are about to be more drastic measures announced that will make what has already been done look like child's play.  I don't know exactly what that entails yet, but I wouldn't be gambling with $25K worth of product if there were a chance for it to go bad or spoil.  We've never seen the magnitude of events being cancelled, schools being closed, (NCAA, NBA. MLB, NHL, Major League Soccer, Auto Racing series, etc, etc, etc....  These are events that generate millions and billions of revenue and bam, just like that SHUT DOWN!!

I know some of you are in more remote places, but it is starting to get quite real around populated areas.  As much as we all Love your Fish Chris, you can't hazard yourself or your livelihood.  This is great because you and us put the time into planning this buy, delivery and awesome exchange of money, fish and story's.

So to end my "word of caution" keep up the planning, just now make sure your plan includes how you would shut this one down if you need to or were forced to.  In the end we will understand, and we will still all be your buddy and dream about the next opportunity to get our hands on your great product.  Stay safe buddy and keep an eye on the news, as I said, there is more to come on this issue.

Chris, since you're to one incurring the most risk with this, I assume that everyone will respect your decision.  And because this is a rapidly changing situation, I also assume that everyone will respect any changes you make to your decision as new info becomes available.

All reasonable concerns regarding coronavirus.  Electronic payment and no handshakes seem like a good solution based on what we currently know.  Voluntarily backing out if you're a buyer with symptoms also seems like a no brainier.  If buyers find themselves sick at the last minute, then perhaps somebody else in the neighborhood can pick up for them and either drop it on their doorstep or hold it until they're healthy.

Also, I am very sympathetic to the fact that a lot of small businesses are going to be is rough shape this year, and I think the socially responsible and patriotic thing to do is continue patronizing those businesses (including yours) where it is possible to do so without incurring an unacceptable risk.

I don't know what your responsibilities are to front the money for the fish you're distributing, but if that's part of the gig then I'll make a recommendation.  If you have to cancel at the last minute and are stuck with a bunch of product, then perhaps the buyers (especially those of us in businesses where we aren't at risk of furlough) can agree to pay and credit their payment towards a future purchase so you don't end up on the wrong side of a line of credit.

As for me, I'm still in.  And I really appreciate the offer @fungunnin, but it looks like all my plans were cancelled so I should be in town and be able to pick up on my own.  And if anyone in Central Seattle is sick and can't make pickup, I should be able to drop it on their doorstep for them.

Chris, I'm hearing some rumors that could spell trouble for the coming fishing season. Plants shutting down, etc. Evidently there is concern about bringing in cannery workers from all over the country and the globe to process. And the canneries are worried about anyone working at a plant testing positive. Then they may not be able to get rid of product.  I've heard there are some serious Corporate meetings going on about all this.

In Cordova, the annual spring SERVS (fishing vessal oil spill response training) training has been postponed until fall.

Hi folks,

Been some great input here and I do appreciate everybody's support.

I've decided that based on the information we have right now, I'm going to continue with the Group Buy.  I do believe that if we all observe the basic precautions that I've outlined in the post above, we won't infect each other.  That, ultimately, is the point of any cautions or restrictions the may be imposed upon us.

There may be some outside factors that do affect the deliveries.  Travel restrictions is one.  I have a hard time believing that they will shut down the freeways, but it could happen.  If it does, we'll have to pull the plug.  Being denied access to my cold storage facilities is another.  I have been in contact with the owner of one, and he assures me that as long as he's got one person in the ground, I can get my fish.  The other, a much larger facility, will only say that they are following CDC guidelines and reserve the right to shut down and with no notice.

All that said, I am going to close orders on Saturday the 14th and get my ducks in a row (setup delivery schedule, etc.).  I will not likely pick up the fish until the 25th-ish.  On Monday the 23rd, I will text everybody and confirm that I am able to get the fish out and ask that everybody confirm back they are good to go.  After that, it will just be a matter of briefly meeting up according to schedule and moving on Corona-free.

If you suspect you might be a carrier in between the time we confirm on the 23rd and your scheduled pickup, please just let me know and I will find a home for your fish.  We have had some great folks here offer to be "quarantine holders" if necessary.  Heck, maybe leave the garage open and I'll put them in your freezer for you.  If there's no safe way to get the fish to you, no worries. I can probably sell them to somebody else, so don't worry about cancelling on me if you are not feeling well or suspect you've been exposed.

Thanks for hanging in there guys, and I'll stay in touch regarding any updates that might change our plans.

Chris

The effect on the fishing fleet is being felt already in a few ways.  In Seward, a big boat that fishes major amounts of quota had shared with me that they might be put on trip limits, and not to go fishing without first contacting the plant.  I hadn't heard about the workers issue, but that could be a factor for sure.

There's a lot of dock talk about prices this year, and I don't know what to think yet.  It's a year I'm very grateful I'll be freezing my catch so I am not at the mercy of the rumor mill.  As you well know, any rumor is good enough to justify pushing down dock price!

Will be looking forward to your custom delivery in Montana now.  Just don't forget your Rifle and Shotgun when you come out.   Bummed for personal greed only, but totaly understand.  Take care of yourself...

Good call Chris.  I didn't want to be the first to warn of this, but I unfortunately was right on this one.  My wife's son works in Emergency Management as a regional director, he's been on this for over a month and has told us every step of the way that this is going to get bad.  Glad you saved face and product on this one.  We all understand I'm sure.  We will of course look forward to the next opportunity, just glad I still have some of the last buy left.

Thanks again and stay safe brother.

Im currently towing a barge to seattle with 128 reefers full of crab.  Big, big money in those containers.  But with casinos and restaraunts shutting down and whatnot, i have a feeling the market for it wont be there.
Wow, that's a high value load there.  I was watching a 48' reefer truck being loaded with red king crab clusters when I was down in WA, and at retail prices that truckload was worth just north of $1.1 million.
And you have 128 of those behind you...

Yeah, and i cant even keep 1 of them for myself.  There would still be 127 more, whats the big deal?  :dunno:

If the Somali pirates caught wind of your load, they'd be pulling up alongside with their RPG's about Milbanke Sound  :chuckle:

Thank you for sharing what you did earlier. It helped.  Thank your stepson for me for staying on top of this.
