Deer, elk, bison/buffalo, sheep.....
Who keeps 'em, fries em up etc.
Please let's keep this on topic and helpful.
-
I don't and haven't ever even thought about it.
-
Honestly, I eat em. But probably very different from everyone else. Whenever I butcher a goat, I like to slice them thin and "cook" them in vinegar, onion, and garlic almost ceviche style. They're also good in soup. I rarely fry them but a sometimes it's a nice treat.
-
I kept them but haven't eaten any yet. Someday I will, maybe this year.
I did have a bad experience in China once, but they were very much fresh and raw and I wouldn't suggest that method.
-
Roger. Really, I'm up for trying to utilize more parts of game at least once. Don't like liver, i do like heart, and want to give the oysters a chance.
-
I am not against trying them but not sure I would actively take them. I am all for trying to retrieve and utilize as much as I can but not sure oysters are on my radar.
-

Have you ever made liver pate? It's awesome, at least from my perspective. I eat it with pork rinds, but try not to pound too much down as it's incredibly high in calories and fat.
I would also like to try kidney, but first I would have to figure out what it looks like, where it is and what to do with it.
-
Never had 'em, but it's on my radar to try. Think I'd try frying slices first, that makes lots of things good.
-
Nope! Nope on liver pate. I'd try kidney.

We did Olympic mountain oysters last year on a young spike buck. They were fine. It’s not really a delicacy but it was edible and not disgusting. Some hot sauce goes a loooong way. I’m not a fan of liver my in-law loves it and I detest kidneys with a passion. I do however eat heart, my 4yr old daughter thinks heart is a treat, and I’ve had lungs before that I didn’t think were bad either. A lot depends on prep on these parts. More so than just regular roasts or other cuts.
-
Had them from lamb. Cut, clean, salt & pepper over charcoals. It's good, but it's different. Give it a try.
-
All part of the guts, coyote's and bird's gotta eat too! :chuckle:
-
I'll eat balls - Sheep, cows, elk, deer, turkey. My last buck, we ate the balls with the heart and liver first night. Good stuff.
-
My dad and his gang eat them. Not for me though. I save the hearts and eat them in a variety of ways. Used to eat liver until one fateful day in Northern WI...... Had neighbors who leased and hunted the farm next to my property in MO who would scavenge our gut piles for them. I thought that was a little odd. My dad has told me about the Hmongs (sp?) that would follow drag paths in the snow back to gut piles and raid them. To each his own.
-
I've never kept them and tried them. I did try kidney from a cow elk. Nasty, and that's coming from a guy that likes liver.
-

Ya that  I don't eat anything from inside of critters, never have really. I know a lot of cats that eat liver, heart, tongue.... sure, I can see that but not those other "things" of which you speaketh of... that's just nasty. :chuckle:

I've thought about that, many guys don't save the heart and if it's from a fresh kill I would gladly take it.

Fried "Sage Brush Scallops" over braised greens and Orange/Coriander Sauce
-
Dang, I think we have a winner there.
-
@h20hunter
So I think they are pretty awesome when treated right.
First it helps to partially freeze the testicles. Throw in the freezer for about 20-30 min prior to handling.
Remove the outer membrane. Then slice into rounds, if it starts to become hard to handle throw back in the freezer. (it reminds me of fat that wants to liquify because of the heat of your hand).
After its firm and cut into rounds dread in egg wash and panko. Or egg wash and flour/corn meal dredge if you're going for something more southern.
Then fry at 350 for a few min.
-
Here they call them lamb fry's, lol

Any luck with kidneys?
-
Its never even crossed my mind... Have been wanting to try an elk tongue though, anyone keep um?
-
I always figured there are some things that don't belong in your mouth...for me testicles are one of those things :o
-
Tongue is awesome, better than heart in my book. Elk have a big enough tongue to make it worthwhile, deer not so much.
It has to be prepared and cooked right, probably the most demanding preparation of all meat. There is really only one right way to do it.

I've eaten kidney at a few really nice restaurants. I wasn't a fan. I figured I'm humble enough to know I'm not as good of a cook as they are. So it wasn't a matter of technique. Just not a fan.

@h20hunter
Yes. Not nearly as good as liver or heart, but not terrible.
Fry in dredge in flour, fry in butter at camp the night of the harvest. Most guys will gag, but they eat with their brains and not with their tongues.
-
Here ya go. :chuckle: :chuckle: We eat em in camp.
-
Never ever have I thought about it. I would try them fried. Heart on the other hand is🤑🤑🤑.
-
When me and a friend hunted British Columbia for elk our guides saved them and cooked them for us. breaded and fried and they were surprisingly good :twocents:

Saved the tongue this year from a cow elk, need to try and cook it one of these days. If you have a link to how to prepare please share.

I'm having a bull butchered in January, his balls would be heck of a meal for someone not me.
-
I like deep fried Chicken Gizzards, that is about as close to "looking Like Testicles" I will ever put near my mouth. :yike:
-

Could probably get a few nut steaks out of them!

Lmfao now I've heard it all
-
😂
-
Nice.
Now I feel bad I left em. Any drops a deer close by holler....I'll fry em up!
-
😂
Even better than that they are under a buck.
-
Ewwwwwwww
-
You stop it right now sir. :chuckle:
-
Chopped, the show on food network had a contest with them a while back. Not sure if I could stomach that or not. I guess they have some kind of a lining or whatever it is I am not able to think of right now that you got to get rid of???
I know I like Chicken gizzards though, so rolled in flour and deep fryed if similar maybe...
There is a bar in town that has or had CHicken GIzzards and as a kid that was a main road staple, as in something to munch on, like Jo-Joe's while driving.
-
We tried them on a bull elk in Idaho... won’t do that again. At first they were good but after the second slice the texture and after taste got you. Tasted like an extremely rutted up bull elk. I do wonder if perhaps they’d taste better outside rut.(https://uploads.tapatalk-cdn.com/20201109/e178b41342e7d4b7b6364c9956e98999.jpg)

yeah gizzards I like. LOL.
-
Liver, Deer, Elk, Cow's, but that's about it. Kidney no. Heart no but I guess if prepared differently I might try again but the time I did it was bitter.
Pickled Pigs feet no, Tripe oh hell to the no... Brains no.
But yeah I like Deer Live and Elk Liver, one of the first things I eat after a kill.

Heck yeah, when I was a kid down in South Alabama, my dad and I used to stop by one of them old-timey gas stations that served chicken gizzards. Used to get a big old box of them and just dip in ketchup while driving around. Those were some good days.
-
Steve Rinella did antelope nuts on Meateater. He called them Hot Buttered Buck Nuts. Looked pretty good so we tried it with Little Pathfinder's buck last year. Didn't turn out too bad. Basically sauteed them in butter and added Louisiana Hot Sauce just before they came out of the pan.
-
Shot a boar bear during elk hunt. Cut the nuts out and put them aside. Couldn’t talk the hunting partners into trying to eat them! The whiskey jacks gottem instead. Anyone ever read a clinical explanation on what nuts are? Whew, they lawd I’ve got a strong stomach but after reading that I’m gonna wait and have some prepared by someone that knows what they’re doing.

I'd suggest preparing Bear Ball Sashimi !
-
Balls procured! Well, kind of. Hunt Wa member who's a good buddy smacked a lil buck and is working on recovery now. I of course said save the nuts!

Negative on the video but I'll post up pics this evening.

Balls are prepped. Oil is heating up.

Ok....pretty good. Kind of like a bland spongy chicken nugget. Two balls, 8 lil nugs.....done deal.
-
My son is scheduling his lab for neutering. Does anyone want some free "neuts"?
