Anyone ever make a bacon pepperjack pepperoni? Local meat shop makes it but for good reason he's pretty tight lipped on it. Just curious if anyone has any tips?

Their pepperoni is so good , especially the pepper jack bacon . The jalapeño cheddar is really good too . Their pepperoni is thicker and seems to be way more juicy than the normal snack stick type way dry stuff . It’s not cheap but worth the price and the drive
