It's just the wife and me. I'm doing an herb crusted NY Sirloin roast, first smoked for a couple hours, and then sous vide for 6, searing with the torch to finish. Not sure about sides yet, maybe Brussel sprouts and mashed yams, keto cheesecake for dessert.
How about y'all?
-
I have a tri tip in the fridge doing an extended marinade and rub. Will cook that up along with some roasted potatoes and veggies for Christmas Eve.
-
What's in the marinade? I bought mine a little early and might just do that.

Olive oil, worchestershire, garlic, black pepper, oregano, basil, and lemon juice

10 lb prime rib for us, side green bean casserole, roasted asparagus and the daughter is making a brule for dessert.
-
Christmas Eve I will fill the big crockpot full of chicken with homemade egg and flour noodles. We'll also have a big lefse spread with a variety of homemade smoked meats, sausages, smoked fish and breads. For Christmas day It will be French toast and berries for breakfast and then I will cook a nice prime rib on the Rec Teq and serve it with root vegetables from our garden.

Prime rib.

We have a family breakfast tradition. The family gets together about 9:30 at one of our homes and we make Swedish Pancakes, fried ham and sausage.
-
Smoked Brisket.
-
Prime rib is our Xmas tradition. I don’t like buying beef but can’t pass up when they go on sale at Safeway for 5.00 a pound. Usually get a couple and cut a couple roasts and a few packs of steaks.

Blacktail Backstrap, cooked sous vide, with mashed 'tatoes and gravy, cooked veggies in cream sauce, garden salad, sparkling cider, raspberry Jell-O salad. For desert we'll have kid-decorated cutout cookies, maybe some peanut butter chocolate kiss cookies, coca cola from glass bottles, and of course some good coffee and hot chocolate for the kids.

That would probably work well too. I have done it with a splash of liquid aminos too instead of the Worcestershire

Elk rib roast in the sous vide. Seasoned with rosemary salt (if you know you know!). Finish with the torch. I'll make my world famous mashed potatoes, couple fresh loafs of sourdough, and I'm sure the wife will make something green.

We did Christmas dinner last weekend. Served a platter of razor clams, venison tenderloins, and garlic bread. :P

Another thing I don't like/understand is how can folks take a PERFECTLY cooked (med rare) piece of prime beef, and then put horseradish or A1 on top of it. Guess I just like the taste of blood/meat. :tung:
Back on track.....
This thread is useless without pictures!
Prime rib with a garlic/pepper/misc spice crust under a kosher salt crust.

Xmas eve will be baby back ribs, mac n cheese, brussel sprouts, and twice baked potatoes for the in laws. Rest of family is coming over the Xmas day and it will be prime rib in the sous vide, spatchcocked turkey on the smoker, mashed potatoes, broccoli casserole, apple berry crumb pie, and way too many appetizers to list. Plus I was able to get my hands on some hard to find wine and bourbon throughout the year that will get opened up.
-
Moose loin, fried potatoes, cornbread, green beans with new potatoes and bacon, cherry or Concord grape pie, haven’t decided
-
Doesn't get much better than that.

Airplane food. LOL. Flying on Christmas day.....

Medium rare no thanks and Horseradish goes on all red meat.
I draw the line at fish sauce though :chuckle:

I changed up the marinade by subbing the fish sauce with oyster sauce and adding red Chinese vinegar, dry sherry, tamari soy, and 5-spice blend.

Wife made corn chowder with elk sausage. We do a crazy big dinner at thanksgiving.
-
Okay so I'm a Ribeye guy through and through and I like my steaks medium plus at the minimum. So a prime rib is very rarely on my radar...
But all this talk of Prime Rib the last week or so had me thinking and then the wife says I should make a One for Christmas, so here it is before going in the oven.

Tamales

I have a few that like more done meat. So sadly as rare as I could go but was big enough the outsides edges got done enough and kept some pink in the middle.

One of the greatest meats on earth!!!! The elk loin.

Wife wanted a Mediterranean type dinner last night for our friends get together so we did chicken kabobs with 12 different spices on them. Tzatziki sauce. Orzo pasta salad, tomatoe cucumber salad, pita breads etc. It was pretty dang good.
Today we tried to recreate our favorite pizzas from Fazzari’s in Clarkston so we made a taco pizza and a shotsy pizza. Had a shrimp salad before the pizza. Turned out awesome. Lots of cookies, wines, beers, etc. Good times and good eats with friends and family.
