Them's a lotta meats. Recently did a brisket which a neighbor bought for me for watering his garden for a week and two butts for the 4th.......he overpaid me with a large brisket so he got a good portion of both. So much fun.......and am zeroing in on the cooking times. This true BBQ is a great treat......buy it, and you will pay some serious money for it. Have a great feast.

Suggestion: If there are any left overs, make some mashed potatoes and put chopped up brisket or pork butt between an upper and lower of potatoes in a enameled cast iron dutch oven. Bake at approx. 350 for an hour.......grated cheese on top.

Or take those same mashed taters and then stir in cheese. Toss in the waffle iron and then put your left over brisket in between for a sandwich.

they are amazing. Used to make them with all my left over taters. Especially good with you make rustic mashed taters with the skins still in there.
