Title: Adjustable Angle Knife Sharpeners

I have an amazon electric knife sharpeners and a work sharp field sharpener as well, but I can't seems to get a particularly sharp edge with either one. They also seem to only work for certain angles, which isn't great for the variety of knives I have that work best at different degrees for the edges. Don't really trust my skills with traditional methods like wet stones where you have to control the angle, I'll probably just make them more dull.

I've seen some ads for products lately but hoping to get some input from others. Any suggestions?

Tagging as I’m always looking for a good sharpener.  I have the Ken onion and love it….but would like something I could take to camp and re-sharpen knives as I use them.   I was just doing this nternet searches and some of them are darned expensive set ups.   :yike: :yike:

I use the work sharp or a stone to put the angle or edge on.
Then I use a honing rod to take the bur off.
You look at that knife wrong,and you can almost feel it cut ya.

I have several sharpeners but when I want a very sharp edge, I always use the Lansky.  Finish it with wet sandpaper on a glass pane or a leather strop treated with Tormek paste.  Scary sharp.

It helps when you're unsure of the angle to be able to match it up with the bevel.

Try using a sharpie to cover the bevel. You've got the right angle when the black goes away.

Between those 2, I’d go with Work Sharp Precision.  It’s a lot like the Lansky but with a finer angle selection.  I’d put the whole thing in vise though, looks like you have to hold on to the base otherwise.

If your budget allows, look at Edge Pro, they have a few different models now. I've had one for at least 10 years now and it has served me well. I couldn't sharpen a knife to cut hot butter before hand. Brought back to life a few old knives that had been abused and now razor sharp.

I use this for my utility knives, it removes metal so it's best for stuff like filet knives and Vicky kitchen knives that are inexpensive to replace when they wear out.

It literally takes 5 seconds to get a good edge.

This is the system I was considering.  May have to buy once and cry once....LOL  Most of my knives are 100+ dollars per knife so might as well spend the money on a quality sharpening sysetm to maintain them.

Agreed.
Not sure what honing rod i use.came with some kitchen knives.
But ya that thing will touch it right up.

Yeah, I religiously use my honing stick. I think my electric knife sharpener just kinda sucks even though I keep the blade wet and run the blade through there properly. Just a bit of pressure, not too fast or slow.

Do y'all push the edge forward or drag it backwards on your wet stone? Everything I've ever seen says to push it forwards.

Edge forward, into the stone (or the stone into the edge).  When using the strop, it’s just the opposite.

I usually run it back and forth with the same pressure, but I'm using large water stones.

I'd try and figure out how to use the work sharp you got. You're probably developing a burr. Once you get rid of the burr, you should be able to get it pretty sharp. You dont have to be really precise on your angles to get a decent edge.

Table is set 20 degrees ish
You don’t touch the blade with bare skin. That means period.
It’s a slightly rounded profile, but it holds anedge extremely well
A couple passes os a steel, good as new

I've trying this all morning with no success. All I get is plastic shavings from the bottom of the cup!

Good tip.  I also saw one once about using the edge of your truck side window, actually did it once and it worked fairly well.
I was using it last nite.
Not scary sharp,but sharp enough to do some fieldwork.

Another thing I noticed was,you have to do go very slow even strokes.
Try to sharpen quickly with a coffee cup,won't get that sharp.
Go as slow as you can and even strokes and it works.

Yes, for years and years.  Just a ceramic sharpener, after all.  Be sure to wipe the black residue off the bottom of the coffee mug, or the boss of the house will have you sleeping with the dogs for a while.
