I have several sharpeners but when I want a very sharp edge, I always use the Lansky. Finish it with wet sandpaper on a glass pane or a leather strop treated with Tormek paste. Scary sharp.

If your budget allows, look at Edge Pro, they have a few different models now. I've had one for at least 10 years now and it has served me well. I couldn't sharpen a knife to cut hot butter before hand. Brought back to life a few old knives that had been abused and now razor sharp. G
Once you get a good edge on your knife you shouldn’t have to do a full re-do unless you really abuse it, chip it, or something similar. Just touch up with a strop or ceramic rod and you’re good-to-go.
