I have several sharpeners but when I want a very sharp edge, I always use the Lansky. Finish it with wet sandpaper on a glass pane or a leather strop treated with Tormek paste. Scary sharp.

If your budget allows, look at Edge Pro, they have a few different models now. I've had one for at least 10 years now and it has served me well. I couldn't sharpen a knife to cut hot butter before hand. Brought back to life a few old knives that had been abused and now razor sharp. G
Once you get a good edge on your knife you shouldn’t have to do a full re-do unless you really abuse it, chip it, or something similar. Just touch up with a strop or ceramic rod and you’re good-to-go.
I have one the “old school” belt sander type sharpeners Table is set 20 degrees ishYou don’t touch the blade with bare skin. That means period.It’s a slightly rounded profile, but it holds anedge extremely wellA couple passes os a steel, good as new
Any of you guys ever use the bottom of a coffee cup to sharpen a knife.The best knife sharpener you have ever owned ,might just be hiding in your cabinet.Never know.

Good tip. I also saw one once about using the edge of your truck side window, actually did it once and it worked fairly well.

Yes, for years and years. Just a ceramic sharpener, after all. Be sure to wipe the black residue off the bottom of the coffee mug, or the boss of the house will have you sleeping with the dogs for a while.
