Have eaten a bunch of it.
Depending on how severe may discard part or all of affected joint.

I've eaten 5 or 6 elk with hoof rot. I do all my own butchering, I've never noticed anything unusual about the meat except that quarter is usually smaller due to atrophy. I feed it to my kids, no concerns.

This may be in my head, but my cow from last season seems exceptionally tender and was limping pretty bad, like maybe moving slow keep her less active, not running up and down mountains getting all tough.  :dunno:

The last cow I shot had hoof rot and she ate great. Granted, it wasn't to the point her toes were falling off, just the soft part of the hoof. I have had one buddy who shot one that was so bad the meat was putrid, but I think it was an extreme case and she may have had other problems that were caused or exacerbated by the hoof rot and resulting poor health.
