What are some of you guys favorite ways to cook deer or elk tenderloin? I'm planing on having some for dinner and wanna try a new way to cook them. :drool: Thanks

Put some Johnny's and pepper on them and rub with olive oil and cook until medium rare.  Keep it simple.

I like to marinate mine in a mixture of 7-up, some pepper, a little bit of of your favorite brand of steak sauce and a bit of johnny's. Let it soak that all up for at least a day or so. Cook it high heat on each side for a very short amount of time, like a minute tops then move to a lower heat and slowly cook them. Great, now my mouth is watering all over my keyboard just thinking about it.  :drool:

rub with peanut oil,and put blackened seasoning on it heavy..drop onto a smoking hot castiron skillet for 2min per side,should be white thick smoke when it hits the pan

Slice about 2lbs tenderloin, backstrap, sirloin or eye of round 1/2-3/4" thick.  I tbsp soy sauce, 2-3 cloves garlic sliced thin, 1" cube of ginger sliced thin, 2 tbsp olive oil, juice of 1/2 a lemon or lime OR 2 tbsp rice vinegar, a dollop of honey, and a generous grind of black pepper.  Whisk everything except the meat in a glass dish, add meat and stir to cover evenly.  Marinate refrigerated, covered for 2-12 hours.  Heat your grill to nuclear, 1-2 minutes per side.  Serve with a nice tossed green salad and ice-cold ale or your favorite hearty red wine. 

This is also my favorite way to cook wild turkey breast, except the heat is reduced to medium-high.

turn the grill on it's lowest setting, add wood chips for full smoke effect. Add a little salt, peeper and garlic. Cook till internal temp is 80 degrees. YES, that is blue and smokey.

Now I am hungry.

Marinade:

1/4 cup balsamic vinegar
2 tbsp dijon mustard
2 cloves crushed garlic
1/2 tsp fresh Thyme
2 tbsp Worchestershire sauce
4-5 tbsp extra virgin olive oil

Whisk thoroughly.

Tenderloin preparation:

Ensure your tenderloin is free from any hair/dirt and rinse well in cold water.

Marinate tenderloin 4-8 hours (not critical) in a glass bowl or gallon Zip-Lock.

Grill:

Remove tenderloin and insert a meat thermometer lengthwise into the thickest mass.  Place onto a medium hot grill to sear one side.  Flip over in a few minutes to sear the other side.  Cut the heat from one burner and/or cook on indirect heat until the internal temp reaches 155 degrees.  Remove from heat and lightly tent with foil on a platter.  The meat will continue to cook for a few minutes, reaching 160 degrees or Beef-Medium.  Drool, Slice, and Serve!  :EAT:

If you have a roast season it and place into the smoker do it like a prime rib it is great smoke it until it reaches a temp of 145-155

+1 but add bacon and garlic and onion got some elk in the fridge for some tasty treats :drool:

Extra virgin olive oil and some pepper in a nice hot skillet. Have the rest of dinner ready before they go on the heat. We love chantrelles with deer and elk steak... Beer.

I make up a southwest marinade for the them, take some salt, pepper, cayenne pepper, parika, olive oil, some onion powder, garlic powder and make a paste and let it sit the fridge for as long as you want then drop on a HOT grill to get a good sear on it it and then let it cook for 2 minutes on each side and then its done.

I do a couple different versions which are really easy.

What you need-
Butter- 1/2 stick in a pan heat start heating it slowly so it melts
Veni- cut into thick 3/4" steaks
Italian salad dressing
Italian bread crumbs
1 big onion sliced thick
chopped garlic- more the merrier

Put veni steaks in marinade of italian dressing one night
take out steaks and roll them in italian bread crumbs
fry onions in butter on high until they start to get a little caramelized- put in a seperate bowl
make sure there is lots of butter in pan- get it really hot but not smoking
throw in veni- NO MORE than 2 minutes a side
don't fiddle with them, don't cover them just two minutes then turn(or until crumbs are brown)
after turning brown side up, put all onions back in pan around veni.

put onions and veni(i have oven safe frying pan for this) in pre-heated oven at 375 for about 15-20 minutes depending on how you like your meat cooked.

make some yukon gold mashed taters and fry up a fresh batch of *censored*ake(or wild even better if your pro level) shrooms-

YOWSER! my favorite way to cook a veni-steak-

you can do this like swiss steak too for the not-so-great cuts.

prep same as above but, after a quick fry to make em crispy, add in a cup of sour cream and a can of cream of mushroom soup- mmm- goodness too....

BUT! if you have really tasty meat- I mean a really good deer/elk- nothing better than sea salt, garlic and fresh pepper- seared quickly just to brown the sides and eat it barely warm in the middle......ahhh- damn I'm hungry!

Salt and pepper, anything else and you are covering up the flavor of the meat.

thats funny right there that coating on the cart will probably be giving that meat a nice cancer flavor :yike: :chuckle:
