Title: Summer Sausage Question

 Have made Venison Summer Sausage an Elk Snack Sticks before:
 My hunting partner has mix wild game Deer, Bear, Elk and Antelope about 1-2 lbs each. All from last season.
 Was going to give it to his dogs, I told him I will make Snack Sticks or Summer Sausage for hunt camp this year.
 Would it turn out ok if just mixed all together an add some extra pork

You should be able to mix most red meats together, I would worry if you added some of last years turkey in with it though !!!

Should be yummy !!!

Yep, should be fine. Just add some extra spices if you are worried.  :chuckle:

I do this almost every time I make sausage.  I have even thrown in boned out rabbit.

i mix pork with my deer, and beef with my elk. has always worked great for me. i would not think you would have any probs.

 Thanks for your inputs was able to make 5 - 3lbs sticks. Made 3 garlic/peppercorn an 2 jalapeno/garlic. Had a little bit left over an made about 1 1/2 lbs of breakfast sausage. Should of hidden it from my kids one stick gone, they had to "try it" Looking forward to Elk camp.
