Title: Garlic and Onion Meat Sticks.

Made this recipe the other day and turned out good. Thought i would share it on here, sence Old Dog asked for the recipe, he liked it  ;)

Garlic and Onion Meat sticks

9lb of meat (your choice)
1lb of Bacon Ends and Pieces

4 tablespoons of salt
2 teaspoons of Curing Salt
3 teaspoons of Garlic Powder (more can be added if desired)
2 table spoons of Minced Onion (more can be added if desired)
1 teaspoon of Coriander
3 tablespoons of course-black pepper
1 teaspoon of Anise Seed
1 teaspoon of Allspice
1/2 cup of Dextrose ( or 1/3 cup of sugar)
1 cup non-fat-dry-milk
1 cup of cold water.

Grind meat and bacon together.

Mix Curing Salt in water.

Add the rest of the seasoning together on a 1 gallon ziploc bag or large bowl, mix well.

Sprinkle seasoning mixture over ground meat, add water/curing salt mixture to meat, mix well.

Stuff in to casings, and let stand for 24-48 hours to cure.

Ready to smoke...

sound good man will have to save this one. close to what i do but will have to throw a few more spice in and try it out.

i love that pic :chuckle: man am i twisted or what. :chuckle: i know gasman won't get mad for the thread jacking because he understands the pain i am in untill we get a yote on the score board :'(  :chuckle:
