Title: Electric Knife Sharpeners?? (Work Sharp WSKTS Sharpener)

Does anyone here use an electric type sharpener for knives? I've been thinking about getting one but I'm not sure how well they work or which would be best. I thought about maybe getting one of the countertop models that are pretty common but they remind me of the little deal on an electric canopener and I havent had the best luck with those. I currently use a diamond stone, with the little orange dots and steel plate, or a tradtional stone but I wanted something more professional and consistent. I would mainly be sharpening my filet knives and also use it for my other knives and kitchen stuff. I just bought an old Craftsman sharpener on CL for $10 but I dont know how well it will work. The guy says it takes some getting used to but I just dont see how it will do a good job, its basically a rotating stone, and there is no way to get down by the handle. I tried it last night and pretty much unsharpened my knife!  :chuckle: I looked at the little Work Sharp and it doesnt look too bad for the price. Also the Edge Masters one, but it is basically just a belt sander - I have one of those already! I could just get finer belts and use that?  :dunno: But how would I hold the correct angle of the dangle and keep it consistent? Any suggestions from you guys?

I have one similar to this one but it's an older model.  Works good in my opinion, especially when you've got a ton of work like cutting an elk when you're going to use it a lot.

I have one of these sharpeners (model 130).  I can see how it might remind you of an electric can opener.  It does put a good edge on fairly quickly.  I usually pull it out when I'm cutting up an animal as I like to have dangerous sharp blades when butchering.  All my used hunting blades get touched up with this prior to hunting season too.  Anyways you asked what other use.  This is my electric sharpener brand.

For sharpening at home I use a Chef's Choice 2 stage sharpener. I have no complaints with it and have used it for at least 5 years.

i have one but find it doesnt work on certain knifes. if the blade goes to the handle evenly you wont be able to sharpen the whole knife and if the blade is too thick like my gut hook skinning knife it wont fit in. they are designed for kitchen knifes so keep that in mind. it does do a great job though on my filet knifes and my other skinning knife. i also have a hand held sharpener and it goes with us hunting. i would buy a good hand held sharpener over an electric any day. you can stop half way through skinning an animal and in 2-3 swipes through the sharpener and your back in business.

Thanks guys. Yeah those ones in the 1st 2 replies are exactly what I was talking about. They just remind of me the slot on my can opener!  :dunno:  But they do work pretty good huh? Did you look at the 2 I linked to? I think I've scratched the edge master from the list but I really like the work sharp setup. I also like the Work Sharp WS2000 cuz it can do all the shop tools and things like axes, mower blades, etc, and the see thru wheel is a really cool feature. Then I would get the knife attachment that is pretty much the same deal as the WS Knife Sharpener. I saw the knife sharpener on Amazon for about $70 and the WS2000 on ebay (but I hate using eBay or Paypal cuz they are so anti-gun) for about $41 with no knife attachement, but I can buy the attachment for 30-40 bucks and have the knife and tool setup for about the same price as only the knife sharpener. I really like the looks of Work Sharp stuff, I'm think thats what I'll go with just not sure which one. I would still use my hand stones for sharpening, I could keep one with me in the field on on the water if needed - but I really want a good electric system that would be quick & easy, professional and consistent - and most importantly - quick & easy!  :chuckle:  Thanks for all the replies and opinions, it is very helpful!  :tup:

Have one what? Like the Chef's Choice style? Yeah, they are mainly for kitchen knives and maybe scissors, no tools right? Very good point - thanks!

Mine will also sharpen serrated blades.  I sharpened my machete once with it.  It cut too cleanly I darn near cut myself on the swing through with some brush.  Don't need it that sharp.  Got a grinder for the axe's etc..

My 2 stage Chef's Choice handles all my hunting knives except one. That knife is a beast. It's like putting an edge on a 1/4 piece of flat bar.

I have a Chef's Choice commercial series - similar to the newer 120's and sportsman version.  I love it.  I sharpen all the kitchen knives about 1 per quarter and camping knives once per year and buchering & hunting knives multiple times depending upon how many animals need to be butchered.  I got it as a gift about 4 or 5 years ago, and since have bought one as a gift for my dad.  I have seen some of the cheaper ones die from too much use, but the stainless bodied ones seem to hold up well.

A coworker of mine brings this one (I think this is the model, if not it's the same line) to Fire Station a couple of times a year. This puts one helluva edge on our knives (We aren't to easy on the knives either).

I use the Lansky every year, but you really can't beat the ease and time of an electric sharpener.

My ONLY advice is if you are getting an electric one to make sure it works on serrated knives as well. Even if you don't use your bread knife regularly, it is a very handy feature to have.

Great - I just decided to order one off Amazon yesterday. About 90+% of the comments, over a hundred of them, gave it killer reviews and said it works better than any of the chef's choice models.
 
As far as serrated I think it will sharpen them but only the back side.
 
It says it puts a "convex" edge on the blade, not sure what that means but I guess I will find out.
 
I decided to buy it from Amazon vs eBay even though it was about $10 more #1 since they have a great return policy and more so for #2 - I dont want to give eBay/Paypal any of my money since they are so anti-gun!!

So I got my Work Sharp sharpener yesterday  :IBCOOL:  I have only sharpened one knife so far but my 1st impressions are very good!
 
I took one of my oldest cheapest rusty old filet knives, and hit the sides of the blade with some 150 grit to clean the faces off and then tested it on a peice of computer paper to see how sharp it was, it wouldnt even cut it at all. So then I ran it thru the WS sharpener with the medium belt (I think its a 220belt) about 5 times each side, like less than 2 minutes, and it was pretty damn sharp! It sliced the paper nice & clean, but I wanted to get even sharper so I ran it thru like 4 times more each side. Then it was really sharp, not as sharp as I can get it with my stone but very sharp, sliced the corner the paper clean off with a quick swipe with less than 3min total time sharpening and the stone would take me at least 15min or more to get it that sharp. Then I put the honing belt on, dont know the grit but its probably 800 or finer I'm guessing. (I read the book and the honing belt is 6000 grit) Ran it thru another 3-4 times each side and it was shaving sharp! I literally shaved the hair on my arm with it.
 
Now after working with my stone I can get it just as sharp but it takes me some time and the edge is not consistent across the length of the blade like this thing does. Now it will pretty much slice the paper just by the weight of the knife. The edge is very nice & consistent all the way down the blade and it took less than 4 minutes total.
 
So far I am sold and loving it, of course its only one knife but it was one of the worst I had. It is exactly what I wanted, quick, easy, consistent, and the kife is SHARP! It came with 6 belts, 2 coarse, 2 medium, and 2 fine/honing belts. Then when I registered it they gave me 2 replacement sets for free, so a dozen more belts for free! I will update you all again once i do more knife and spend more time with it - but for right now I'd say its a great little machine!!

OK - so this weekend I was sharpening everything I could get my hands on and this sharpener is SO SWEET! My wife is loving all her kitchen knives now that they will shave the fuzz off a peach. My 10yr olds are running around with razor sharp pocket knives and whittling every stick in the neighborhood to a razor sharp pointed spear with the bark shaved off (I'm guessing it wont be long before I am taking one of them to the ER to have a finger sewn back on or stitches put in somewhere), all of our scissors are so sharp they slice & shear stuff with little effort. Oh yeah, and my filet knives, the reason I bought the thing in the 1st place, are so dang sharp they are almost TOO sharp! If I am not careful they will slice right thru the spine of a humpy when running down the side of it. Got some NICE looking filets though! This sharpener is freaking killer!!  :rockin:

I have the Chefs Choice Model 120. It does take a little getting used to, but it will sharpen a knife sharp enough to shave with. That is how I verify that the knife is razor sharp, I actually can shave the hair off of my arm. Some of my kitchen knives are nothing more than stamped sheet metal with a handle attached. It doesn't matter to me, 15 seconds in the sharpener and the knive slices right through whatever I'm cutting. These garbage knives don't hold an edge very long at all, but it doesn't matter, I just give it a couple of pulls through the stone and a couple through the strope and it is back cutting like a razor again.
One thing I really like to do is to sharpen the knife rather coursely so that I can slice bread with it. With a fast grind, you can put an edge that has a little "bite" to it. I call it a mini micro serrated edge. When I sharpen it this way people can't believe that a staright edge knife can cut soft bread so well.

Just curious if there have been any issues yet.  I know with the Chef's choice models that they don't run forever.

I've owned several over the years.  Recently picked up a Work Sharp.  Hands down, better than any other I've used.  You will not be disappointed. :twocents:

 I use a Chef's Choice also to put a rough edge on it and then hone it with some 1000 grit sandpaper from the auto parts store for body work. Then I take a leather belt that has been sanded a bit with some rough sandpaper and use it as a strop. You'll be happy with the results.

Oh man, I love it. No problems at all, still works good and is so fast. Always puts a consistent edge on any non-serated blade, its dummy proof and for me that is good! Sharpening scissors is so freaking easy too. And I havent needed to buy any extra belts for it yet either, still on the first set except I did start using a new 'fine' belt. I would buy it again with no hesitations.

No.  It's its own unit.  I sharpned a dozen fillet knives last night, and none have ever been sharper......even new.  Best piece of gear I've purchased in a looooong time. :twocents:

Isnt it sweet!? Did you just get it? When I first got it I was running around the house sharpening everything. I would like to get the big one for shop tools & all that but I just dont think I would use it very much - but I would have the deadliest shovels in my whole neighborhood, thats for sure! :chuckle:

Yep.  Bought is a few weeks ago for my dad.  I'm a terrible knife sharpener and he's very good with a steel, so he always does my knives.  Just kept getting tired of a bunch of friends telling me how I was missing out not having a Work Sharp, so I bought him one.  He wasn't too impressed, and it sat for a couple weeks in the box.  Finally I went up and pulled it out and he gave me a crap garden knife to sharpen (because of course "I was gonna f it up").  After the quick sharpening, he was impressed and went inside to eat dinner.  I then pulled his fillet knives out and proceeded to make each one sharper than they've ever been.  Including a Havalon fillet knife and a couple big super thin blood groove halibut fillet knives.  I drug them all inside upon completion to show him what an amazing job this thing does.  He had a complete come-apart.  Madder than hell that I touched his fillet knives, and after I made him feel the sharpness, he was so upset yet confused, that he said they're just too damn sharp!  "I'm gonna have to wear that damn kevlar glove I have now to fillet!"  I left and went home.  Ten minutes ago he called and asked where he could buy one in town, because he had a bud come up with a box of knives and he immediately wanted one reguardless of cost.  Kinda funny how those old boys take to new technology. :chuckle:

i got one of these for my birthday.  i like my knives scary sharp and was a little skeptical at first.  giving it a shot, i'm now a believer.  used it to put a new edge on a lot of cheap knives that have been used and abused over the years, edges knicked etc.  i can't do a much better job with a diamond stone and steel.

it worked wonders on my fillet knives, something i'm very picky about.  i use dexter-russels and the edges tend to get pitted if there's any moisture in the air.  the works sharp totally restored the edges and made them better than new in my opinion.

Update, just got the work sharp portable unit. I ran it side by side against my three stage chef's choice sharpener and the clear winner in all categories was? Well let's just say the chefs choice will be sold.

I used a friends work sharp last weekend while cutting my elk.  Never even heard of the thing but I was impressed! I will be buying one for myself in the near future.  :tup:

I have a Chef's Choice commercial series - similar to the newer 120's and sportsman version.  I love it.  I sharpen all the kitchen knives about 1 per quarter and camping knives once per year and buchering & hunting knives multiple times depending upon how many animals need to be butchered.  I got it as a gift about 4 or 5 years ago, and since have bought one as a gift for my dad.  I have seen some of the cheaper ones die from too much use, but the stainless bodied ones seem to hold up well.

Where can I find one? I'm on a time crunch so I probably could not order one of the web. Is this something you could find at Bed Bath and Beyond or something?

Wonder how many times you see Bed Bath and Beyond on Hunt Wa??  :chuckle:

I haven't researched this much, but have been eyeing the Cabelas electric models, any input on those?

Just got mine today and sharpened every knife in the kitchen including a couple of pocket folders.  One I used the 50 degree on but the rest were the 40 degree angle.  This thing works GREAT!  BTW, I only paid $69.95 including shipping for mine from Kotulas.com.

Well got mine today and went to work on the knives. This is great, except for one little thing. The wifes finger, no sooner than I said watchit they are really sharp now and we/she lost a little weight. LOL here, I can do that she is in the other room and doesn't read here. But I would recommend this setup to anyone and everyone.

I just bought the Work Sharp WSKTS and all I can say is unbelievable.  I have sharpened every knife in the house to near razor sharpness.  Even knives that seemed almost like garbage.

My Work Sharp arrived today.  I unpackaged it, looked through the instructions for kitchen knives, and familiarized myself with it's operations on how to change belts, guards, etc...  It seems very easy to use, straightforward even if you aren't used to using "power tools".  Then, I took out the utility knife from my knife block.  It's a fairly unused knife, so in terms of use still pretty new and fairly sharp from the manufacturer.  It's also a simple, straight, non-serrated blade.  I did a cut test on a sheet of computer paper, and the cut (more of a nick) was maybe 1/8th of an inch, if that.  I then ran the blade through the sharpener using the "medium" belt, followed by the "fine" belt.  I then did another cut test.


Ho.  Lee.  Sheeeeeeeaaaaaaarrrrrp!!!!!    :yike: :yike: :yike:


Using only the knife's weight, the cut was easily 2 inches, and I believe it would have been deeper if the tip of the knife hadn't fallen away from the paper. 

I'm gonna go ahead and log off Hunt-WA now, as I will be spending the next who-knows-how-long sharpening everything I can get my grubby little Polish mits on.

One of the little drop point pocket knives I sharpened, when I first got mine, has been used to shave corners off of 1X4s to prep for sanding the corners round, and some other wood trimming slicing activities.  I just loaned it to someone who is trimming a bunch of paper edging today and it's still like a razor.   :tup:

I would have been back to this thread sooner, but I was busy making things sharp.  Sooo...

First of all, I need to warn  April to be careful when she sits down since the couch is really starting to get a good edge.  The refrigerator is honed well enough to whittle down a pinewood derby car, and I'm pretty sure the dogs can't sleep on the bed tonight unless we stock up on gauze pads and medical tape (those furry little *censored*s turned out pretty good!).  My cellphone keeps slicing it's way out of my pockets, and I'm not even going to start getting into what happened in the laundry room!
