Title: BBB Strikes Again
Post by: Jason on December 19, 2011, 01:08:12 PM
Finally work has slowed enough to let me do some smoking.
I let it cure for 13 days with High Mountain BBB cure, smoked with hickory.

YUMMY!!  Looks delicious and way better than anything you can buy at the meat counter. What cuts of pork did you use?

Hey good idea, making BBB.  I made some last year about this time.  Gave a lb. of it to a friend of mine & he said it was the best bacon he had ever eaten.  His wife made some tater corn chowder with some of it & it was really good.  Might have to make another batch!

Jason, what temp do you smoke that at?  I might be stuck as I can't seem to keep my gas fired one below 230 deg.

Ed you'll be fine with that temp. Have a meat probe and smoke it till it reaches 145 an your golden. Great looking bacon Jason

Fill every other hole in your propane burner with a nail.  I doesn't have to be super tight, just stops the flow of gas, and you can get way lower temps.
