after filling my freezer with bright red king salmon, ive been trying to figure out what to do with it all, and i have been experimenting with different recipes and ways to prepare the fish... but first came up with the idea after a killer day flounder fishing

this is one of my new favorite recipes ive come up with, i call it the Sea-Monster Sandwich

take a good sized fillet of saltwater fish, salmon, cod, halibut, flounder.... skinned and boned (salmon is amazing for this)
but, you dont really wanna excede 3/4" of an inch as, its just too hard to fit in your mouth

in a large bowl mix up snoqualmie falls lodge pancake mix and some beer, thinner than what you would make pancakes/crepes with, but not runny... beer: whatever you got, its all good.

get the deep fryer going as hot as it can

slice open a ciabatta roll for each silce of fish

for the sauce

mix up a cup of mayo, 1/2 an medium sized onion, some pickles, a spoon of stone ground mustard, squeeze 1/2 a lemmon, and add generous ammounts of dill in a bowl, salt and pepper to taste, and if you like it hot toss in a jalapeno... adjust ingredients to taste

fry the fish till its golden brown, set aside to dry/cool on paper towels

take your roll, and put up to 3 silces of chedar or american on each half of the roll, stick in the oven till the cheese is nice and bubbly, then add the flsh and a nice layer of the homemade tatar sauce, letuce and tomato optional

good beer? IPA

sides? dont worry about that, these things are huge
