Has anyone done this with Dove or Quail breast?

 No. But I have done it with a lot of different livers . A 1" cube of prime venison liver is second only to bird livers . Although Dove livers would pretty  small.
 
Ramaki is pretty tasty can imagine it being bad with any "dark irony" meat . :twocents:

Traditionally its done with Dove breast...

 Did not know that . My mom used to make it years ago as a fancy treat and always used chicken livers .

Chicken livers is the only way I've ever had it.  Usually around Christmas time.  But I bet dove or quail would be good.
